  • Delicious paneer and garlicky mixture stuffed into puff pastry paranthas and baked till perfection.
    GARLIC PANEER PUFF
    Ingredients
    1 tbsp chopped garlic
    400 grams cottage cheese (paneer), cut into ½ inch cubes
    4 puff pastry parantha
    2 tbsps oil
    ½ tbsp finely chopped ginger
    2-3 green chillies, chopped
    1 spring onion bulbs, chopped
    1 small red capsicum, cut into 1 inch pieces
    1 medium onion, cut into 1 inch pieces and layers separated
    1 small green capsicum, cut into 1 inch pieces
    Salt to taste
    ½ tsp red chilli flakes
    1 tbsp red chilli sauce
    2 tsps soy sauce
    2 tbsps corn flour slurry
    2 tbsps chopped spring onion greens
    Melted butter for brushing
    Milk wash for brushing
    Black sesame seeds for sprinkling
    Method
    1. Preheat the oven at 180ºC.
    2. Heat oil in a non-stick pan. Add garlic, ginger and green chillies and sauté for a minute. Add spring onion bulbs and sauté for 1 minute.
    3. Add red capsicum, onion, and green capsicum and sauté for 1-2 minutes.
    4. Add salt, red chilli flakes, red chilli sauce, and soy sauce and mix well.
    5. Add cottage cheese and mix till well combined.
    6. Add corn flour slurry and mix well. Cook till the mixture thickens slightly. Add spring onion greens and mix well. Take the pan off the heat and allow to cool slightly.
    7. To make the puff, take a puff pastry parantha on a worktop. Place a generous portion of the mixture in the centre. Fold all the four sides to make rectangular puff.
    8. Brush melted butter on a lined baking tray. Place the puff on it and brush some milk wash on it. Sprinkle sesame seeds and bake in the preheated for 15-20 minutes.
    9. Take the baking tray out of the oven and allow to cool slightly. Serve with tomato ketchup.
