    My mom, she just passed this year, I love you Ma! She used to chop apples into little bite sized cubes and chop up celery and put it in with her homemade stuffing!! And you know how to make real legit stuffing lol it's called stuffing for a reason lol hands down! The best stuffing and turkey you'll ever have. This wonderful lady knows what's she's talking about lol

    Mrs. Mattie, I have never been satisfied with cooking a turkey 🦃. It has not been as juicy as I hoped, but after seeing you in this video, I will be cooking me a delicious fall off the bone turkey 2021. Thanks 👍😊. Much 💕 your way.       Young people already on RUclips with their cooking show can cook just as good as some older people.
      I put chicken gizzards and chicken livers in my stuffing i wash them chopped them in small pieces and cut up my onions and boil my chicken gizzards and chicken livers with chicken broth.
      After my cornbread bake i let it cool and i take the crust of top take a spoon and dip the middle out and put in another pan and put my butter in my black pepper, accent my chicken seasoning, my onions cut up my eggs in it put my liver and gizzards in it and put some chicken broth and a little basil, and complete seasoning and mix everything up and put it in the oven and let it bake.
      That's how i do my stuffing and the chicken seasoning do be salty it the flavor that's taste good.
      I use regular corn meal and add flour and milk and egg for my cornbread then take the middle part out for my stuffing after it bake.

    Miss Mattie, you remind me of my dear MIL. She knew every recipe without writing it down! Now that she has passed, I was nervous about making some staples. I’m in an interracial marriage, and listening to your soothing self and watching your recipes has me confident that even though I will never match Momma’s cooking, I will do a darn good job!

    I'm a Heck of a cook, and get comments ALL OF THE TIME. Yes...I'm guilty of using many different seasonings. Ms. Mattie..I LOVE watching your videos, because you cook The DOWN HOME way! Mainly salt and pepper and basic seasonings that is used for certain southern dishes. I appreciate that, because there was NOT ALWAYS seasoning salt, or it least we did not cook a lot with it, until the 1970's. I will keep watching your videos. I still get ideas every time I watch.

    Ma'am you remind me of my mother so much, the way you cook is just like my Ma. We're First Nations from Canada my mother used to cook the neck and all that too and we would all let our elders and grandparents have them... it was like a right of passage almost.     Oh. My. Gosh! That turkey is AMAZING! I told y’all this would be my first whole turkey. It turned out so great. Juicy, tender and flavorful. I had a 12-1/2 pound bird. I placed the turkey on a rack in a roasting pan so I could get it out and get to the drippings easier. I put two apples and some celery in the cavity. I wrapped it very well with heavy duty foil and cooked it wrapped for 3 hours and 15 minutes. Then I cooked it uncovered for another 20 minutes. This is now going to be my go-to recipe. Thank you so much Mrs. Mattie. I’m making that dressing tomorrow morning just to change up the menu for the leftovers. I saved those pan drippings for the dressing.

      Teresa make sure you fully season your Turkey you can use a oven bag for you don't have to keep on opening the oven and it will base on its own

    Ms Mattie thank you for the best turkey I ever cooked. Once you use an apple you won’t go back my husband and I really enjoyed it. The turkey was tender, juicy you don’t need teeth lol. FYI it doesn’t make your turkey taste like apple for anyone that was wondering.🥰

    This looks absolutely delicious. Thanksgiving meal is my all time favorite. Your voice is so therapeutic it’s really nice watching you cooking and listening to you.

    Ms Mattie I appreciate you. A few things
    1. stuffing is toasted bread
    2. dressing is cornbread only
    I was with you until you pulled out the Pepperidge farm bag. No ma'am. Best dressing is cornbread (can be up to 3 days old), stock from turkey, veggies, a little sage, and poultry seasoning.
    3. I do go the extra mile and stick blend my giblet gravy and put thru a strainer
    (no chunks). It's just my preference for smooth giblets gravy
