I been watching sushi vids today. This is the first guy to show great skills. Keep in mind, just because a person is Japanese doesn't mean he knows how to cut a fish.
It did not go in the "trash" It will go to a tray of cut offs where apprentice butchers will trim off all the scraps for smaller servings or collected for bulk tuna sales (cans of tuna fish) The head and tail will go back out on the dock for use as bait tomorrow. Innards will be rendered down for animal feeds or other uses. It is a very efficient use of the fish.
yeah.., even the fish head is used as a single dish, either fried or made curry. we do that in India. there are other parts of the country that does it too.
