Honestly, I don't think you'll lose much if you just both react to the episodes fresh together. Zack knows the story beats from the campaign, so you'll still have the fan/noob dynamic which (at least I personally) really enjoy. And that way we get Zack's immediate reaction to things they changed from the campaign.
Nicole getting so defensive over Kaylie's treatment of Scanlan was already amazing, but Zack's jaw drop reaction made it absolutely hilarious! What a turn-around for her opinion of him lmao. As for season 3, I think both of you going in blind would be fantastic, but I wouldn't be upset if Zack watches ahead. Whatever works best for you guys! Glad you're both okay!
I do like how careful they are to show Grog only attacking armed opponents - Stonejaw raised him with slightly more honor than Kevdak. And the flash that directed Grog's attention to the locket is almost certainly the Everlight finding a soul that can be redeemed.
I say do the first 3 episodes of season 3 where you both have completely blind reaction, where you watch the first 3 episodes fir the first time together. Then, after those 3, you decide if you want Zack to watch then be with Nicole for the react (and her first viewing.) Just to give yourselves a taste of both of you going into the episodes without knowing how the episode goes.
Glad you are okay after the car accident. The next episode is great . It is based on the *Critical Role* episode that hooked me on *Critical Role.* I think you should both watch season 3 blind together.

I think it would be cool to see the two of you on more even footing for season three. And zack would still have the advantage because he knows the general direction the story is taking

Nothing but a puddle of tears and depression, especially that opening... shocked me and ugh... yea, and the "killing" scene... oof. Yea... I FUGLY cried... not ugly cry, but worse.
Thankfully you are both ok! I say for season 3 watch them together and experience it for the first time together. The past 2 seasons released episodes weekly in batches of 3, so you'll obviously want to guard against spoilers if you only do one episode per week. Or...I suppose you also could watch all 3 at once but then release only 1 reaction per week.

Watching three episodes and getting them up Fri, Sat, Sun seems to be the meta, but that's some srrious editing crunch so... My advice is, however you feel comfy, I'll still be there. Love you guys. (Also, Vex has been blatantly thirsting over Percy since S1 ep3, and between the whole Briarwood thing and the goddess of death, its time to ship❤)
If it helps, if you go back and watch you'll notice young Grog attacked the armed people. Yes still WAY below his skill level but shows a line in head even if he never noticed it then. Also I think both blind would be good. And this way one of you isn't mentally freaking out and trying to hide it ;) and don't worry it's typically 3 at a time...with good cliff hangers. I mean in this season they were Vex's death, the group separated, and this episode as end of batch just to prepare yourselves.
I think the most interesting real parallel is that Travis, who plays Grog, hung out with the nerdier kids when he was younger and had a huge growth spurt. When the football players talked badly about his other friends or other kids bullied his friends and he was big enough to stand up for them physically, he did. It feels like this was a little more heartfelt and impactful when the throwdown against Kevdak happened. Maybe because: actor. Maybe because: relatable to Travis. Who knows? But Grog & Pike have THE best friendship out of the whole group. Makes me happy.
Just FYI, the early episodes of the campaign had an introduction with each character narrating a short backstory for themselves. In Grog's, he told the story of meeting Wilhand, and getting beaten and exiled by the Herd. So, viewers of the campaign knew vaguely what had happened. But it's a lot more dramatic seeing it happen in the animation.
