  • At Dooky Chase’s Restaurant in New Orleans, a hearty bowl of chef Leah Chase’s gumbo is an authentic taste of history. Widely known as the queen of Creole cuisine, Chase has served her Southern fare to world leaders and celebrities alike over her 71-year career, and she continues to cook today at age 94. Though her gumbo and fried chicken are legendary, her restaurant-a culinary landmark-made history of its own by serving as a meeting place for the civil rights movement of the 1960s.     Aww this popped up in my recommendations and made me a bit nostalgic. I was lucky enough to meet Leah Chase a couple months before her passing while dining at Dooky Chase. She was still working and in charge of the kitchen even then and it was an absolute pleasure to speak with her. Rip to the queen

    I hate when people put hot sauce in Gumbo or Red beans and rice because it's sacrilege. I bet she still has a Red Beans and Rice special on Mondays. If you're from New Orleans too, then you know what I'm talking about.

      Ned Gold It's too vinegarry so it covers up the flavor of the spices and makes the beans smell weird. I think if you want more heat in your red beans, cayenne pepper or pepper flakes is the way to go.
      My family in Houston puts hot sauce on their beans all the time but I think it's the Mexican influenced style of cooking that made them start to do it.

      Amen, I'm from TN but my mom's family is from southern MS / LA. Hot sauce isn't put in red beans and rice nor gumbo, if you HAVE to have some spice cut up a pepper and put it in your bowl.

    I loved the series of interviews with Mrs. Chase. And I think they may still be on YT if viewers look. It gives you a much fuller sense of this remarkable lady - how she grew up as a youngster, where she went to school, what she did BEFORE she found her way into the kitchen. Really great, and she has such humor, such grace, such a mischief. I like the way she had no qualms - gave Obama 'what for' when he started waving that hot sauce around..LOL.
