That’s a geoduck “gooey-duck” clam…and they are effing delicious if cooked correctly. When I was 15 I went with my uncle and cousin to dig up a bunch of these at low tide in the Puget Sound.
Hey there Guga, the mystery meat you have is a local delicacy and quite common in the Pacific North West and Vancouver Island. These are Geoduck Clams (pronounced Gooey Duck Clam) harvested by deep sea divers wearing the dry suit and that big brass globe with portholes on their head. Geoduck Diver is a trade and pays really well.
that's a geoduck (it is pronoucned "gooey duck"), a lot of people refer to this as the....uhhhh...sea...pp...but they are actually a delicacy and a rare find for sashimi lovers, sometimes a lot of people eat this sashimi style with lemon and salt as well as soy sauce and wasabi. I have tried it once before but it was quite a while ago. It has that crunch reminiscent of like a thinly sliced cucumber, taste as fresh as one but having that also sea kinda scallop hint at the back of the tongue when I tried it.
Here in Mexico it is known as "chiluda" because of its resemblance to a part of a man's body. That shellfish is a delicacy, although honestly I prefer other shellfish. LOL

Guga, please try Kala Namak (Black Salt from South-East Asia) it has a very unique taste, it is not usually used for cooking but for seasoning it afterwards, please test it in various ways.
As soon as I saw the mystery meat, I knew what it was, and I've always wondered how to cook it. Not that it's a thing in New Jersey, but it never hurts to be prepared. I didn't expect chawan mushi, but it makes sense. It's such a beautiful canvas for showcasing exquisite textures, colors, and flavors.
Looks like the Pacific geoduck. Nice and sweet. Super good!! I don't see those very often even living here on the West coast. Asian markets like Ranch Market 99 with their big tanks might have them.

Geoduck clam, have actually clammed for them in Oregon. Must say they are a most difficult clam to access, but worth the effort. Delicious in chowder, too, or quick fried in batter, tempura style.
After watching so many eps of iron chef japan, I kinda knew right away that the steamed egg dish is what they call "Chawanmushi". And with that geoduck and uni and other stuff in there, it'll definitely taste really good.

God I've always wanted to try geoduck Edit after watching: God Chef Hiro always knocks it out of the park. Whether it's through amazing simplicity, or through equally amazing complexity. He is just incredible. IDK if I'll ever get to try geoduck without traveling to the west coast (USA). It's hard enough getting any fresh/live seafood in Appalachia. Let alone the even more exotic stuff. But as a mollusc fanatic, and extreme lover of arthropods and fish, I will always find a way to get them in my belly. Never tried any kind of echinoderm though. I really want to try urchin one day. And as for arthropods, I really want to branch out from the usual crustaceans, meals worms, and crickets. Tarantula is big on my list to try. I just love to try anything different, and I hate when people can't see beyond their own cultural biases when it comes to food. Especially when it comes to proteins.

Everyone recommends the popular dishes which are pork sinigang, chicken adobo, and beef bulalo but I would personally recommend kare-kare, pork sisig, pancit palabok, and pancit malabon. I'd like to see you cook it traditionally and then with your own spin which is probably gonna be sous vide. Make sure you serve all these dishes (except for the pancit) with white rice!
Geoduck is amazing with soy sauce and wasabi. One time my dad had to stick his whole arm in the mud/sand hole it was in as one this size was digging down on in coming tide haha… I didn’t even know you guys were going to eat it exactly how I said! 🔥

(i think they were expensive plus i hate seafood) so you're looking at around $45- $60 per clam.
Well, I've never seen it in writing before, always called them Goey Duck. The thing is you don't know what it is like to be walking down the beach in Washington state and have a 6 foot Goey Duck squirt up you pant leg or face. There is nothing like getting your own clams. Those are very hard to dig out by shovel, so deep. We usually dig up horse clams. Smaller but easier to catch. Goes run faster.

Gouy duck is how I think it’s spelled. Had some on my trip to Japan 4 years ago. I’m a big traveler, language is a fun one to learn and great nutritious food there. Loved Katsu curry on rice a whole lot.
