it's "interesting" to most of the people because most of the people buy their meat post-prepared. They don't know the meat they consume need to go through more or less similar preparation process - slaughtering - butchering, etc.

I am sure it tastes fantastic! Once I had a cow head soup in a village of Northern Greece. In Greece we have many excellent meat soups but this was and remains the best soup I had in my life.Of course the Chinese and the Greek cuisine have different procedures and materials but the simple cow head has anyway enormous taste potential , so plenty of cooking styles can be excellent . I think it's by far the best part of the animal
