I have a feeling I've eaten here before and no exaggeration, one of the best bowl of anything I've eaten in my entire life. Saigon pho tends to be a little more heavily spiced but as Gary mentioned, this restaurant's founders came down from the north where pho tends to be milder in flavour. But don't let my description fool you, the broth is simpler but it works so well.

Been watching some of Max's food vlogs in Thailand, his spice tolerance is incredible and he seems addicted to very hot spices. ฺVisited his channel again from your recommendation I just found Max actually did most of his food vlogs on Viet foods which are much less spicy heat wise, he seems to settled in Vietnam as his domain for food vlogs.

In 2004 when I returned to Saigon, those 2 restaurants used to be 1, the 2 houses were connected with a door way and a window...When I came back 4yrs ago, they told me the 2 brothers spilt the house into two, built them, and set up 2 separate restaurants ....they operated everything separate from cooking to cashing ......recipe remains the same though .......people don't put fish sauce in Pho when cooking, fish sauce is condiment for you to add yourselves
That's the perfect way to eat Pho Tau Bay with fat broth and scallions. I wish July comes sooner. But darn it, it's closed (11:00 AM) by the time I got out of the Tan Son Nhat airport. I will be waiting at the door at 4:00 AM the next morning.

Why Max didn't take you to Pho Le, Pho Hoa, Pho Ngoc. You can't do a Pho episode without those 3 spots. I am a pho expert who's been living in HCMC the last 13 years. I know my city and its pho spots.
I've been to Pho Le and Hoa before, both great spots for sure. I've never been to Pho Ngoc though so that's on pinned now! Thanks for the recommendation mate!

If you come to Vietnam, you will not be able to eat all the delicious dishes in your life. Vietnam has countless interesting dishes, each region and each ethnic group has a different way of processing.
*Pho in countries with Vietnamese people is almost eaten in the style of Southerners. after 1975 wave of communist refugees. Southerners have brought their cooking to the world. Pho in the South is far different and is commented to be more delicious than the version of pho in the North.*

Northern pho does come with condiments, but it's more like pickled sliced garlic and pepper...they don't add hoisin or sriracha. I don't get the fishy comment. Yeah this had so much flavour Willie. The brisket was so soft as it’s been simmered for hours. It’s easily the best I’ve had but I must admit, I usually go for Bun Bo Hue so I’m no expert!
