I'm making these fish rolls today! I am using a mix of smoked salmon and trout for my fish because I have access to it in my region (Maine, USA). I am also adding sauteed grated carrots as in your recipe, and a homemade red pepper sauce I prepared last Fall during sweet pepper season here on the East Coast. Your crust recipe is perfect - a nice basic crust that will be crisp/tender. I also appreciate a recipe for oven baking since I avoid fried foods for everyday eating. Once in a while is ok though. Thank you for sharing this great recipe with us all!
