My understanding is that when Miss Daniels began answering questions on direct that President Trump's lawyer objected and that the judge said (paraphrased) to "sit down and shut up." That is why there were no objections during direct. Trump's legal team figured that if there was a conviction that the judge's directive would be great grounds for an appeal. The judge gave them a wide latitude because the defense didn't object. That's their job and their prerogative, not his.
Also, had the defense merely stipulated that he had a sexual encounter with ms. Daniels, her testimony would have been far more limited, if not excluded entirely. The defense literally put her on the stand, and then allowed her to speak without objecting.

Had they simply stipulated that the sex occurred, it would have been irrelevant. The fact that their defense is 'it never happened' and 'she's making it up' makes it a question of her credibility to establish that the sex occurred.
