I nearly didn't watch this video because bun cha is a meat dish - the literal translation from Vietnamese to English is 'noodle pork'. However I went ahead anyway on the presumption that I could substitute tofu for pork. Was delighted when your recipe turned out to be bun chay (literally, 'noodle vegetarian', made with tofu as the protein source) rather than bun cha. Thank you, I shall be making it soon!

Made my own versions very similar to this 3 times now. Once with soy sauce for the salad dressing, once with fish sauce, once with mixture of both. All were delicious, I can't decide which I prefer haha! you got preference for soy vs fish for dressing? (I know here you use fish)
I wouldn't use either because they would merely add sweetness and not the lovely caramel flavour of palm sugar. In Vietnam (and Thailand) demerara sugar is often used as a substitute for palm sugar.
Hi Amanda, both are fine to use in place of palm sugar. The measurements should be similar but do it by taste to make sure you get the perfect balance of flavours! - Lee
Hi Jeremy as you know alot of people dont eat pork can you bake a chicken crispy skin too or what other meat can you use to make crispy skin other than pork if not its ok. Thanks again for yr delicious recipes we in the Caribbean enjoy delicious chinese foods. Thanks again

also I suggest trying roasted peanuts on top at the end, goes really well

Can you swap out your fish sauce with vietnamese vegetarian fish sauce?
