Well if you want them to taste like chicken stock, sure use chicken stock. But if you want them to just taste of carrot, or want them to feed a mixture of vegans and non-vegans at the same time, water is a good way to go. To say "never, never water!" You sound like some chef stuck in the early 90's who can't comprehend the possibility that there are people who don't want to eat animal products of any kind or any other way of cooking other than what you know yourself. Gotta keep that mind open dude! There aren't really that many "nevers" when it comes to cooking!
