Thank you, my honest opinion, this is the best smoker fir the money! It’s really holding up well, I always try to spray cooking oil on it before every cook to keep the rust down. You really can’t go wrong with the Pecos!
Finally decided to take out the tuning plates in my old country pecos, going back to the basics of letting the smoker cook the way it was intended. Reason being is, I noticed that I wasn't tasting the full flavor of wood smoke because of the tuning plates, I was cooking with more of radiant heat from the plates. Now I will use them for larger cooking space for chicken 👍🏽but I also have a top rack in my pecos also 💯
Eric Hill I’ve never tried lump, I only use charcoal to get things started and give me a good base of hot coals, then it’s all wood. I used to buy my wood in bags from Academy. I found a truckload of cherry for $60 on Facebook marketplace and I’ve been using that for the last year. Thanks for watching!
Great vid. I'm curious, you said you were going to do a vid on some more mods but I haven't seen them yet. I was hoping to see you mount the valve on the drain hole and what kind of problems you may have run into. I'm taking a break from gardening but will be placing my order for my Pecos in a few minutes. I think it should arrive my birthday week. Really looking forward to it. Keep up the good work.

get a small axe or hatchet at Home Depot and cut your pieces of wood into smaller pieces so you get a cleaner fire. also maybe some fire proof gloves so you can play with the fire with your hands and position the wood perfectly.
Philip Vaughan good question, I do remove the membrane, I think on these, the membrane had already been removed or I didn’t film removing it. But yes, I always remove it. Thanks for watching!

Her eric I'm getting ready for a cook on Friday on my pecos ,what are your gap measurement for how your tuning plates are set and how many tuning plates do you have inside your cooking chamber? This information will be greatly appreciated 👍🏽👍🏽👍🏽👍🏽
The gap goes from 0 and +1/4” at each plate from there. So 0” then 1/4” then 1/2” and so on. I think I have 5 or 6 plates. I have another video on all of my mods and I talk in detail about it. I post a link.

This ain't a diss brother but those looked over cooked. After eating a rib if that bone is white that means it was over cooked. But they looked so good...got my mouth watering. Always good videos. What's your opinion on your finished product?
Henry Lowery you are correct, technically they are overcooked, but that’s how I like um 😁. I like a clean bite but don’t mind if some have the meat falling off the bone. I’ve also found that most people like them a little overdone. But I get what you are saying. Thanks for watching!

You will be happy with either one, they are well built and have great sealed welds allowing you to do the water mod I show in another video. Best of luck and Merry Christmas!
