I can't believe how many enchilada vids here aren't putting a skin on the tortillas. This cannot be skipped. Fry them in oil for a few seconds per side.
Hi. Nagi, I am going to try this out. Can we mix the flour in broth so it dissolves easier or will it affect the roux? Also, I don't have passata on hand so can I use pasta sauce instead? Many thanks.
I think it would affect your roux, I would make that first then add your chicken stalk. You deff wanna make sure u cook that flour. And as for the pasta sause I CnT see why not. I would try it, it CNT hurt it
Refried beans....yesss! No idea what they taste like, but I cant wait to tell the kids I have used this exotic Mexican ingredient in their Enchiladas. : )
Just an FYI, Nagi -- when talking about Mexican or Tex-Mex, the ingredient is cilantro and only coriander if it's ground. Cilantro is a favorite and tasty ingredient and you should specify to avoid any confusion. Thank you. Keep up the good work.

Mexican alert: NOT ACTUAL TRADITIONAL ENCHILADAS. We don’t use flour in our sauces nor wheat flour tortillas and corn kernels. Great effort from the channel tho.
For those hate comments below.. relax lol. You can put whatever you have together and make it ! This channel is so simple with instructions I love it
Best recipe! I made this and came out amazing!! Plus there's no non-sense in the video, no chit chat, just the recipe. 🙌

She knows about the corn tortillas, she talked about them in her recipe and put it as an option but she just prefers the wheat ones.
So?
