    Chicken Kosha is a popular dish of West Bengal. The people living in West Bengal (region in eastern part of India) are known as Bengalis. Chicken kosher is widely made when guests come over, during festival times or at wedding parties. It is curry with less gravy that is slow cooked along with spices and the chicken gets cooked in its own juices. Chicken kosha is often served with poori (also known as luchi in Bengali)/Basanti Pulao (Bengali sweet yellow pulao) or paratha.
    Ingredients required for making chicken kosha -
    Serves 5 to 6
    1330 gm/ 3 lb skinless chicken with bones. I try keeping some fat on the chicken as that gives flavor to this dish.
    27 gm/1 oz fresh ginger
    30 gm/ 1 oz garlic
    2 green chillies (optional)
    400 gm/ 14 oz red/2 large onions (or any onion of your choice) chopped finely
    290 gm/ 10 oz/ 2 large red ripe tomatoes
    1 bay leaf
    4 to 5 green cardamoms
    4 cloves
    2 inch long cinnamon stick
    1 teaspoon turmeric powder
    2 teaspoon Kashmiri red chilli powder or a combination of paprika and cayenne pepper or only paprika if you want to avoid the heat totally.
    2 teaspoon ground coriander
    1 teaspoon ground cumin
    1 teaspoon garam masala powder. I always use my homemade garam masala powder for this recipe. Here is the link to the video if you want to use it - • SHAHI GARAM MASALA | H...
    coriander leaves (cilantro) for garnish (totally optional)
    For marination -
    1/4 th teaspoon freshly cracked black pepper
    2 heaped tablespoons plain unflavored yogurt (regular or Greek)
    1/2 teaspoon turmeric powder
    1 teaspoon Kashmiri red chilli powder red chilli powder. Can use paprika if you want to avoid the heat
    3 tablespoons of ginger garlic paste from the paste prepared
    2 tablespoons lemon juice/1 tablespoon white vinegar
    1 tablespoon oil
    1 teaspoon salt
    Serve this with any Bengali yellow Basanti pulao/Bengali vegetable pulao/poori/paratha.

    Bumbi hello. We have not been cooking lately but Rick is cooking the chicken now which smells so good. I’ve been trying to persuade him to forget turkey for thanksgiving & serve this instead!     Two words Yummy Scrumptious! Am in the process of starting cooking Chicken Tikka Masala and am now contemplating changing it to this. But if the folks at home want Chicken Tikka Masala, well next Indian (Bengali) meal I cook, they will be having this.

      You can leave out the yogurt but it helps to make the meat tender. I used plain unflavored yogurt.

      Chicken kosha is what is known as chicken bhuna in Hindi.

    I will make this soon. One question that I have: Finding whole spices in my area is practically impossible, but we do have ground spices. Can we substitute ground spices for whole spices, and at what proportion? Thank you.

      Just leave out the whole spices and increase the garam masala powder by just half a teaspoon more.

    Bumbi, would it spoil the dish if I added some coconut cream? Only because I like a bit more sauce than my husband 😊

      For more sauce you can add more water and if you like the flavor of coconut then adding coconut milk won’t spoil the dish but will bring in a creaminess.

      'Cooked oil' has a different more mellow but robust after taste. We do the same in Chinese cooking and flaky pastry making too.

      You need to bring it to smoking hot only when cooking with mustard oil. Mustard oil is very pungent and smoking it removes that pungency.

      Sure you can but please do not add lemon juice if marinating overnight. Take out the marinated chicken an hour before cooking and you can add lemon juice after taking out from fridge.

    Bumbi, if you ever see oil coming out of the bottom of your blender it means the ball bearings have gone bad. The ball bearings can be replaced. Buying new ball bearings is cheaper than buying a new blender.

    I'm gonna add potatoes and leave the whole semi finished product in a slow cooker overnight. Then have it with pratha as breaky the next day!

    You really should write a book containing all your recipes. I am sure it would become a best-seller Indian cook book. I would buy a copy, for sure...!
    Watching videos is ok but having all the details in front of you on a page is better to follow.
    I will admit that I have copied and pasted several of your recipe ingredient lists from the descriptions and watched the video over and over to write down the methods because just watching a video is too difficult for me to remember.
