Chicken Kosha is a popular dish of West Bengal. The people living in West Bengal (region in eastern part of India) are known as Bengalis. Chicken kosher is widely made when guests come over, during festival times or at wedding parties. It is curry with less gravy that is slow cooked along with spices and the chicken gets cooked in its own juices. Chicken kosha is often served with poori (also known as luchi in Bengali)/Basanti Pulao (Bengali sweet yellow pulao) or paratha.
Ingredients required for making chicken kosha -
Serves 5 to 6
1330 gm/ 3 lb skinless chicken with bones. I try keeping some fat on the chicken as that gives flavor to this dish.
27 gm/1 oz fresh ginger
30 gm/ 1 oz garlic
2 green chillies (optional)
400 gm/ 14 oz red/2 large onions (or any onion of your choice) chopped finely
290 gm/ 10 oz/ 2 large red ripe tomatoes
1 bay leaf
4 to 5 green cardamoms
4 cloves
2 inch long cinnamon stick
1 teaspoon turmeric powder
2 teaspoon Kashmiri red chilli powder or a combination of paprika and cayenne pepper or only paprika if you want to avoid the heat totally.
2 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon garam masala powder. I always use my homemade garam masala powder for this recipe. Here is the link to the video if you want to use it - • SHAHI GARAM MASALA | H...
coriander leaves (cilantro) for garnish (totally optional)
For marination -
1/4 th teaspoon freshly cracked black pepper
2 heaped tablespoons plain unflavored yogurt (regular or Greek)
1/2 teaspoon turmeric powder
1 teaspoon Kashmiri red chilli powder red chilli powder. Can use paprika if you want to avoid the heat
3 tablespoons of ginger garlic paste from the paste prepared
2 tablespoons lemon juice/1 tablespoon white vinegar
1 tablespoon oil
1 teaspoon salt
Serve this with any Bengali yellow Basanti pulao/Bengali vegetable pulao/poori/paratha.

Looks delicious! Will try it this weekend. Thanks Bumbi for the recipe. Just one suggestion. It would be great if you could mention ginger and garlic quantity in inches...grams get confusing for me. I cook occasionally.

I am glad you like listening to sitar
From Mauritius two thumbs up.
Thanks
Thank you will be making this in the week
Great! Looking forward to your feedback
It was very good, thank you!
I am glad you liked it
I will certainly try that. Can I use lime juice instead of lemon?
Sure you can but use just 2 teaspoons
I love Ur cooking from Nigeria. Is it a must to use yoghurt and what type of yoghurt
You can leave out the yogurt but it helps to make the meat tender. I used plain unflavored yogurt.
This looks lovely 😋. I'm making it tonight 👍🏼
Looking forward to your feedback
Fantastic flavours
Yummmm

Great work Masha ALLAH ❤️ So Delicious 🤤

Thanks
What is the best wok to buy?
Awesome thks
Bumbi I have a questions; what makes Kosha different than other chicken curry’s you have made? Why is this dish famous only in Bengali culture? Anything specific to know about facts would be thrilling to me. thank you. Loved your cooking style. ❤
Chicken kosha is what is known as chicken bhuna in Hindi.
Looks delicious
Thanks Nitadi
Great recipe thank you 🙏🙏
Thanks for leaving a comment 🙏🏾
Hi Bumbi, in the written recipe I do not see any green chilli to add for ginger garlic paste, you mention it in the video, just asking do reply❤
I edited it in the description box and you can see it now. Thanks
This looks delicious, and I know I can substitute a different protein with most of your recipes. Thank you for your dedication, you’ve taught us all … so much.
Thanks so much for watching my dear friend.
❤❤❤❤🎉
Looks delicious.
Thanks
❤❤❤
I will make this soon. One question that I have: Finding whole spices in my area is practically impossible, but we do have ground spices. Can we substitute ground spices for whole spices, and at what proportion? Thank you.
Just leave out the whole spices and increase the garam masala powder by just half a teaspoon more.
Bumbi, would it spoil the dish if I added some coconut cream? Only because I like a bit more sauce than my husband 😊
For more sauce you can add more water and if you like the flavor of coconut then adding coconut milk won’t spoil the dish but will bring in a creaminess.
Good
Thanks
Can you tell us why you heat the oil to smoking point but then allow it to cool.
Thank you.
'Cooked oil' has a different more mellow but robust after taste. We do the same in Chinese cooking and flaky pastry making too.
@@jlife9092 Thank you. Very interesting. 🙏
You need to bring it to smoking hot only when cooking with mustard oil. Mustard oil is very pungent and smoking it removes that pungency.
@@CurriesWithBumbi Thank you. 🙏
How much chicken to be used?
Can I marinate the chicken the night before ?
Sure you can but please do not add lemon juice if marinating overnight. Take out the marinated chicken an hour before cooking and you can add lemon juice after taking out from fridge.
@@CurriesWithBumbi Thank you so much for replying 🙏
@@CurriesWithBumbi
I didn’t know this, and my marinated chicken thighs has abit of lemon juice over it, and it will be in overnight. Will it be okay?
2:35 Did you forget to mention the four cloves?
Oh no, I did forget to mention but I’ve put the proportions in the description box. Sorry about that.
Missed it by an hour,
Bumbi, if you ever see oil coming out of the bottom of your blender it means the ball bearings have gone bad. The ball bearings can be replaced. Buying new ball bearings is cheaper than buying a new blender.
Thanks for that information Brandon.
It is the seal in the bearing housing that has failed and let the grease out.
@brandon_wallace
Is there any specific reason in this video, that you have mentioned the problem of oil leaking out from the bottom of the blender?
@@ex.hindu.now.atheist it happened to me twice.
@@brandon_wallace
"it happened to me twice."
======================
OK... so you were giving a suggestion in general. That's fair enough.
I'm gonna add potatoes and leave the whole semi finished product in a slow cooker overnight. Then have it with pratha as breaky the next day!
Sounds extremely delicious
You really should write a book containing all your recipes. I am sure it would become a best-seller Indian cook book. I would buy a copy, for sure...!
Watching videos is ok but having all the details in front of you on a page is better to follow.
I will admit that I have copied and pasted several of your recipe ingredient lists from the descriptions and watched the video over and over to write down the methods because just watching a video is too difficult for me to remember.
Thank you 🙏🏾
🏴🇮🇳👍
🙏🏾
Are you Bengali?
Yes
Can you use chicken breast ?
Please do not use chicken breast for this recipe. It will get rubbery.
Bye bye Matajee
Why not give the recipe ? waste of time !!
What do you mean by that???? I am explaining in detail all throughout the video, the ingredient proportions are given in the description box below the video. What more do you want ?????
