Desserts and other confections have a lot more sugar and we seem to inhale those pretty well! If you don’t want to use that much sugar or butter, don’t use it. DUH! I’m going to tell you why this recipe is definitely ON POINT! First, he didn’t used any flour, corn meal nor any Jiffy Mix. When you use those ingredients, it’s no longer a pudding, it’s a casserole or bread of some kind. The reason why people use flour or cornmeal is because they don’t know how to keep the eggs and milk from curdling. This man’s recipe did not curdle. His Grandmother and mother got it right. If you want to alter this recipe, I’m sure he’ll be fine with it. He’s just sharing the recipe as it was taught to him. Great job! He’s the only person I’ve ever seen get corn pudding done right!
Jones my mother grandma taught me this same recipe only thing we don't use the flour or cornstarch the eggs thicken it nicely I am so glad you agree in a true corn pudding there is no corn bread there is no corn meal or jiffy that is a casserole u go mama this is the real deal and mama put a little vanilla so ,so good I make these a lot for my grand baby's be blessed

Looks delicious! Have you thought of using the drained corn juice for the slurry instead of plain water? I think that’s what I’ll try just for extra corn flavor. Thank you for sharing your recipe! Can’t wait to try it!

I just made this. Can't wait to see what it tastes like! Happy Thanksgiving! So I didn't follow the recipe exactly. I used 1 less whole corn, 1 tbsp corn starch, less than 1/4 cup of water, 1 cup of sugar (half white, and half brown), a little cracked pepper, a little seasoning salt, and a little garlic, and 1 cup of evaporated milk, same amount of butter as suggested. The flavor was really really good, but the stuff that isn't corn came out curdle-like. Also, there was too much moisture. I'll be referring to this video for future attempts though. The recipe is just like what my mother and grandmother used. Maybe next time I'll follow it exact lol Thanks chef!
it really good if you use fresh grown from your garden silver queen sugar corn oh yeah or you can blanch the corn cut it off with corn cutter and freeze it in double freezer bags and make this from your home grown corn all fall and winter long. usually the corn runs out before spring lol
Hey Big Man!! Why would you want to add water to a good corn casserole? If you had mixed your cornstarch with the sugar, NO LUMPS AND NO WATER!! I would reduce the amount of milk, also. It takes too long to bake and it would have a better texture.Just a bit of helpful hints! Keep cooking, Man!!

I prepare my corn pudding just like you do, except I don't use carnation milk. I'm going to try the can milk the next time I make it.
