The Woman Who Changed Chinese Cuisine in America

- Just as Julia Child revolutionized French food, so did Cecilia Chiang with Chinese cuisine. After moving to the United States in 1959, Cecilia launched the Mandarin in San Francisco. The restaurant introduced foods like Peking duck, pot stickers and hot and sour soup to an American audience, and began to attract celebrities and foodies from across the country. Her cooking has set a standard for Chinese food in America, and has influenced everyone from Alice Waters to James Beard.

I just found out she died two days ago... what a legend, we will never forget her contributions to the United States. Incredible.
yes indeed, rest in peace, she lived to be the grand age of 100!
The news of her death felt like it was yesterday. 安息吧 R.I.P Madam Chiang
Wow, she is healthy for 98
Dan Chau Ikr😁
maybe less mcdonalds
She looks decades younger, she can't be 98. She looks as old or younger than my grams!
Asian!!!
She is 98??!!! 😦
“Good food is good food” exactly!!!
I always used to live by this one statement "good food is bad food"
Now i have finally been proven wrong.
Андрей За́йцев youre not wrong in a healthy standpoint, for example: fried chicken is delicious but if theres an overdoze of it, it might be dangerous.
This applys to evey countrys food
H4rry, to over eat anything good is to do harm. It was Aristotle who said “everything in moderation, including moderation”. That was thousands of years ago.
Barbara Houk good to know, wasn’t he the guy who introduced the word geography?
I agree so much. Some of my friends tell me that they hate Chinese food. I'm like, okay, what have you eaten?
All they list is the crap that is Americanized Chinese food. They haven't tasted the actual delicious Chinese food that hasn't been altered. It doesn't need to be changed for "American" tastes -- if it tastes good to you, it tastes good to most everyone.
Good food is good food, couldn't have said it better.
Good food is good food which is delicious food for the eater. No point claiming it to be good food but the eater does not find it delicious. You say it is good food because you find it delicious, right ?
@@Schocam Don't be that guy, nobody like that guy.
Ho SC
Good food is good food. Also there is a reason why still on the menu for many years.
@@Schocam theres always that one person, that one guy that just has to be on r/imverysmart in every comment section, and congratulations you just won the position
@@Schocam the smartest guy in comment section, very well said you earned it.
HAPPY?
👏👏👏👏👏👏
I like that she doesn't fully take credit and acknowledges that she didn't make it BUT she did introduce it to the Americans. Very humble.
Everyone knows that she didn't make Peking duck. It is a very old recipe, since >1000 years ago
asdfasdf qewrqwer yeah that is the point
Usantanker The O2 Lover I'm just responding to OP calling her humble for admitting that she didn't invent Peking duck. The thing is that she couldn't lie about it even if she wanted to, cause everyone knows that it's old recipe
asdfasdf qewrqwer
I think he was talking about making chinese food as it is in america today
Cecilia Chiang is so cool. Of course in an interesting turn of events, her son Philip goes on to create P.F. Chang's which serves non-traditional Americanized Chinese fusion cuisine to millions of people around the world. 😀👍
Tosh T: I think a lot of second or first generation Asian Americans want to elevate their food to something that is better than just cheap takeout, something that has some dignity. Asian haute cuisine is one way to do that.
P.F. Changs is awful ... I don't see how people actually like the place.
BINGO. All subtility is lost. It's overcooked, over-salted (or over-sweetened), over-battered crap.
+Jaston Yuh I'm not sure if you've ever been to one but P.F. Chang's is far from haute cuisine.
Jaston Yuh if they stop cheap take out ill have to start my own lol
All things considered, her english accent is amazing compared to others who arrived to America at the same time as her and are the same age.
Justin Y. She arrived when she was young. She didn't arrive when she was old, so that's why her American accent is good.
Why.Just why.
It shows how passionate and communicative she lived her life
You just watch anything everything shown on homepage don't you.
Why are you everywhere?
Humble lady

May She Rest In Peace
What a sweet old wonderful woman, I wish her the best, and I wish I could try some of her delicious dishes. She deserves all the wealth and happiness in the world. May God bless her ❤🌻
She is 98 believe it or not
She's 98 and this healthy. That's really saying something about her food.
When Alice Waters started talking about Cecilia and meeting her, and what she meant to her and cooking, I could hear the emotion in her voice, fighting to hold back tears of joy or excitement to share her story of the person who opened her eyes to something wonderful
With social media being so full of hate and negatively, it's such a blessing to stumble upon a genuine feel good video.
Sometimes I wish the American culture was more open towards the stranger side of cultural food. Take for example chicken feet, I love it, especially from Chinese restaurants, but for many people it is strange and absurd. I think there should be more curiosity and interest to try these cultural dishes that are delicacies
A Vsaucy Boi pig blood soup :P
pickled pig foot
I've tried chicken feet, and I personally didn't enjoy the flavor of it. I think it's somewhat of an acquired taste tbh
chicken feet is amazing and pickled pig foot lollololl
A Vsaucy Boi I for one enjoy frozen baby rat fetuses in a burrito or bathtub joji ramen yum 🤗
She is almost 100 and still killin' it in the kitchen!
Every single video on this channel just warms my heart. I'm so happy that someone is showcasing the best of humanity this way. Thank you!🖤
Good food is good food. I don't care what country or culture its from, if you put it in front of me and if it's good it'll vanish. Thank you ma'am so much for your contributions.
I care.
@@DillonTrinhProductions how come
Great Big Story was such a great channel. I really miss it and find myself rewatching episodes like this one often.Thankful to all involved and really hope that they are all doing well.
dang she looks so healthy at that age i wish my grandma will reach that age too because i love her so much :)
These videos are amazing. The camera work is spot on. The sounds and shots are perfect. These videos are so calming. Who ever makes these better be getting a lot of money.
i love food so much... the history behind every meal and the love and passion. it's crazy how much our culture is shaped by food.
hey i saw your comment on domic's video
Who doesnt love food
Yes
If u don’t love food you’re not human
You are my cultures food lemme eat you
I truly thank this woman bc the Americanized ‘Chinese ‘ food when I was young was boring.
Later in my thirties, I studied with a physician from China (while I was in residency). She was blessed to be able to live with her parents here in the US. Her parents knew how to cook both dishes from North China and South China. I know true Chinese cooking. I have been taught by the best.
Across the US by the timeI was 40, the Chinese cuisine had changed from this boring mimic of Chinese food to the more authentic that the lady you featured had introduced to the US. I much prefer her style. And I cook in the tradition of both North and South China thanks to my Chinese colleague’s parents.
OMG, that made me sooo hungry! You inspire me and my channel every single time. Keep it up :)
She had one of the most welcoming smiles I've seen. All my respect to her
I wanna try her food
Just Ice u haven't tried authentic Chinese food?
Authentic Chinese food can be hard to find in the US these days
Jeffrey Wen Ooh I've tried some Chinese food, Chinese-American foods that is, but I wanna try hers
Spiral Journey not really it’s everywhere in China and the west coast has some good authentic food too I’m Chinese in Chicago and I always find real Chinese food, just from different reigons
Spiral Journey Not really as I live in Hawaii where many asians came here and live here.
Lots of authentic Chinese restaurants
I love her.. ❤️ beautiful backstory..
1:26 as a Hong Konger i recognize all of these 4 dishes. Pot sticker (basically long fried dumplings) is my favorite, especially when paired with black vinegar.
I don’t wanna sound uncultured(I’m asian :3) but isn’t black vinegar just soy sauce?
@@bambiii787 Soy sauce is made from fermented soy. Black vinegar is rice vinegar with a malted taste.
@@bambiii787 to put it simply:
Black Vinegar 黑醋 is sour
Soy Sauce 醬油 is salty
welp now I sound ignorant and dumb
@@bambiii787 its ok m8, i dont kno much about western cuisine too
I love this lady ❤️.
Her joy and smile are like sunshine...
Cecilia recently passed away at 100. Rest In Peace, Cecilia. We love you.
"Good food is good food."I agree with her. Food is a universal language beside music. Kudos to this lady. Wishing her good health and her passion of cooking never goes out.
Thank You Cecilia Chiang for spreading authentic Chinese food may you rest in peace...
Her lovely smile at the end. XD Happiness is truly the secret to success
I love her personality she's such a wonderful and lovely strong and powerful woman
I swear, every video melts my heart. Much love to Great Big Story.(I also see the play, short videos of the "bigger" picture) brilliant idea and execution.
Why is this video not longer with more content? There is so much more that can be told and this seems to me like a movie trailer. She is not getting any younger so go back to do it properly with more in-depth interview.
Not necessary. This exposure is more than enough. Moreover, there will be more questions and controversies. Interview some other people. Make some other people famous.
Thank you. You brought joy to many people's lives.
Can we all take a moment to say thank you for all the late night delicious food?
I wish this was longer!
Man how could this video be this small? She deserves a well covered, and enticing foody documentary.
There is something soothing watching grandma cooking
Rest in peace 💕 Soul of a Banquet is a documentary about her, gonna watch! (it's included on Amazon Prime)
I love how she’s always smiling and so passionate about cooking😊
I did a report on Alice Waters!!! Omg this is great! I was doing a report on farm-to-table and farm to table cooking.
wow! What a dedicated old woman to Chinese cuisine! I respect people like her who devote their life to one thing.
She’s so precious
She is so relaxing to listen to.
She introduced potstickers? BLESS YOU
My Kung Kung came here to America in 1955, he was born in Macau but his family came from different parts of China. Catonese food is different than food in the North of China, and Macau has heavy Portuguese influence in thier cuisine. China is a wonderful country with a huge and wonderful cuisine.
Awww Cecilia & Alice Waters, best combi
Yes!! I just came to San Francisco from Hungary. Its my first time in America!! I'm sooo excited! I need to try out her food!!! :D
This is a nice tribute. I wish however that the video also alluded to the fact that Chinese food, like all other foods around the world, is diverse. While we can all think of some iconic dishes from each country, the fact remains that there is such a wide range of cultures and races within each country which manifests itself in a variety of dishes. From my personal experience living in the States, most Americans are familiar with dishes from the Sichuan (川菜)and Canton provinces (粤菜), but not the other main cuisine types in China. I wish we will all have an opportunity to try a wider variety of dishes soon :)
serena19196 But their focus is understandable since the video is about her and not chinese cuisine... And is also very short.
I am so heart warming, I love this video, especially because I'm also Chinese, I also believe that good food should be enjoyed by everyone. 😁
Cecilia Chiang, "Good food is good food."🥑🌶🥚🥩
Amen and God bless your soul, Madam Chiang! Most of all thank you for all that you've done for each and everyone of us!!! ;--) Love always!
Thank goodness for Cecilia Chiang
If someone’s never tried peking duck.... you gotta try it. Melt. In. Your. Mouth.
Katy Out n About I mean......its not suppose to
Be aware that roast duck and Peking duck are different. And most duck you see through the window at a Chinese place, it’s roast duck.
It has unique taste, but melt in your mouth? Does Peking Duck stewed or I ate just another roasted duck?
that one bayu likely roast duck
Ya you know, it might just be roast duck that i tried.
Awesome. This makes me hungry watching her cook those dishes
Rest in peace, Madam Chiang. You were phenomenally brave.
Beautiful story!
very inspirational.
Im a Chinese and read an article about her story, and really appreciated what she put effort in bringing the real Chinese food to the US. Sadly she left us last month at 100.
R.I.P JIANG SUN YUN(Her Chinese name in pinyin)

"Good food is good food."
So true, no matter what I've encountered in life, no matter my apprehension or level of comfort, I've always at least tried something twice to give it a shot. Maybe the first bite was an exceptionally odd bit, so the second bite always is used as confirmation. If you don't try new things, how do you ever expect to grow and develope as a human being? As an American, we are the luckiest people in the world in terms of the assortment of cuisines that are at our fingertips, ready for us to sample and try them. We have communities from the tip of North America, to the very bottom of South America. Immigrants from the far East in Asia, all the way to the shores of England and to the Cape in Africa. Cecilia reminds me of every kind and warm cook who's taken the time to explain something I've never encountered, and the human connection we all have when we break bread with each other. In my opinion, the sharing of food is probably one of the most beautiful aspects of the human race.
Thank you for introducing authentic Chinese food to USA. I hope it can get more popular in the future.
Great job, Ma'am!
And I really love how she sums things up :'Good food is good food.'
Love your enthusiasm too!
Yes Cecilia! I loveeeee Chinese food but I know theres more to it than just stir fry and dumplings!
This is so amazing! Love the story behind this.
Every video by Great Big Story is so fun and light hearted. Honestly the best source for stories.
she's so adorable! this is wonderful
Thank you for introducing Chinese food to us!!!
RIP Cecilia Chiang ❤️
She is my wife’ s grandma and she is a great person.
Brilliant woman.....love, soul and spirit shines through in the food ❤️
She is the Chinese Julia Child and even did a stint in the OSS just like Julia. Why are you only now hearing about her after decades of America enjoying her food and recipes? Racism is why. But, be glad that that didn't stop her from achieving her life's dream and reshaping history.
I don't understand... Didn't Julie Child have a TV show when Cecilia Chiang was arriving in the US, though ? Like, I imagine time and their actual careers is also probably a factor, I don't know.
Soooo.... How on Earth did we, as a nation, go from this wonderful cuisine to the horrid version of Chinese food that is so prevalent now?? Sickly sweet, heavily breaded, and it all tastes the same. The average American Chinese restaurant is an insult to Chinese cuisine, imho.
Ask America, because half the stuff y'all invent doesn't even exist in authentic Chinese cuisine. For example, orange chicken...
Maybe don't go Panda Express? Or order something on the menu besides breaded meat in sticky sauce?
American Chinese food is American Chinese food. Instead of feeling insulted, don’t associate it with authentic Chinese food. It was created by Americans of Chinese descent, the same way burritos were created by Americans of Mexican descent.
Maybe go to a actual Chinese restaurant and not Panda Express
wtf is orange chicken, i remember i was in LA long time ago , man the chinese food sucks , most of the store had that stupid tasting hot sauce ,what crap.
I don’t know why I teared up watching this video but growing up in NYC’s Chinatown and being away for from it for the first time for college, I think this reminded me of how much I miss my city and neighborhood :(
Sweet woman, good food, may she live a long life
Very well said, the last quote.
When you book your flight From non stop to Manila Adding 1 stop over Because you want noodles in Shanghai Your a foodie
This channel is so much better than that other channel who only repeating same footage/scene on their vids

Humble, sweet, & blessed 🙏🏽❤️ I would love to meet her 🙂
The thumbnail are whispering "my masterplan have succeeded"
But she cannot represent every province in China. Each province has its' own cuisine. She is from Shanghai. But it is up to authentic Shanghainese people to judge if her food is Shanghainese enough.
Rhoxe .C 😭😭😭
We must preserve her cuisine and Make sure it doesn't get forgotten.
I clicked because she looked so sweet and the other woman looks like a happy old Hillary Clinton
