    We’ve been self-quarantining at home for the last 2+ weeks in NYC, and I figured many of you might be in the same boat…so I hope this video gives you some ideas on how to make your life at home a bit easier and more delicious. Hope you stay safe and healthy, friends!

      Thank you for the video Nisha! Do you know is adding a piece of kombu will flavor the beans? I had heard it can help de-gas them. Our family has a really hard time digesting them, but enjoy eating them. Thanks again, and stay safe!

    I was one of the people not expecting all the omnivores to buy all my beans, and nearly ran completely out. Thankfully my stores are beginning to get their stock back in. It was scary for a moment there. 🤦🏼‍♀️ No beans seems just terrible! 🤣🤣🤣 I have your cookbook so I will have to look up that recipe!

      Check kroger. And, the dollar tree. They still have things, not all we need, but if you get there at the right time....take care xx

    I love that you added science to this video! I love learning why we cook things the way we do instead of just being told how because it helps me learn and become a better cook versus just copying recipes. This is very helpful since I am new to cooking in general.

    Thank you Nisha! In my 3rd year of plant based. Early on I realized success would be about flavor more than all the excellent science. Yours is the only cookbook I’ve ever read cover to cover and it’s because of your command of flavor building and efficiency. Who knows? Maybe some of us will emerge out of quarantine healthier, especially if it tastes really good!

If so people will eat it, vegan or not! And I’m with you there, I think a lot of people are eating more wholesome food and cooking more right now - a nice silver lining during these challenging times.

    Save the liquid from your cans of chickpeas/garbanzo beans - it's called "Aquafaba" and is used as a thickener, and can be whipped into a foam to lighten baked goods.

    Just cooked white beans in the oven this morning! Going to make a white bean,asparagus, zuchini,tomato soup (fresh produce needs to be used because it's getting scetchy.. and making little pizza toast from leftover homemade pizza dough.the rest i'm storing in a container for the week to use as desired. Going to try and create that delicious bowl of beans with pickeld paprika that you had during your live on insta !

      Torsten Weise. You gave me some ideas. I've run out of fresh produce by this time but, I'm going to try your soup idea with some white beans, frozen chopped kale, and some canned tomato sauce. I'll probably saute up some remaining onion, garlic, and add a little dried vegi soup from Harmony House. Serve with brown rice, maybe. You said you made beans in the oven... sounds wonderful... do you make them about the same as you would on the stove top?

    I always keep a pretty good supply of dried beans but was getting a bit low when all this started. I admit I went a little overboard so I was trying to come up with different recipes. Been making lots of chili, veggie/bean soups, pizza with lots of veggies & hummus as the 1st layer and of course can’t go wrong with rice & beans. Thanks for all of you’re wonderful ideas!

    Great tips and recipes! Just a quick mention about the dried beans. Dried beans are not fresh beans that have been dried, the dried bean is actually the mature bean and it is harvested directly dried.

    These are awesone! We literally have a counter-full of canned beans right now 😂. One of my favorite things to do is roast chickpeas, and I've been getting a bit more creative with them!
    More recently, I've made some kimchi-and-curry powder roasted chickpeas and hummus. You have to give it a try!

    allot of indian kinda recipes...and bought a hell load of different beans, which are in the cupboard i've watched a couple of your other Dahl videos

    OMG - that explains why you always add lemon juice right at the end!!!! Made the red lentil curry from your book yesterday and wow wow wow - I literally couldn’t stop eating it and was rather annoyed that I had to leave some for the hubster (especially given I had made it for him in the first place).     I had a bunch of old beans that I canned in my pressure cooker and they turned out perfect! Just pop open the lid on the jar, and you have perfect canned beans.

    Although it is not mentioned here, beans can be soaked overnight or for 5-6 hours and cooked in a pressure cooker. It will take 12-15 mins depending on the quantity.

    We are a meat eating veggie loving low ish carb family and I enjoy your videos. My husband is gluten and legume intolerant though, and I appreciate that you don't hate on meat eaters. There are some angry vegans when I read through comments on veg you tube videos and I don't understand that. We should all be entitled to eat the way we feel best and what aligns with our health interests. Stay well!! P.s. you are gorgeous:)

    very informative, i'm giving this to my husband if i'm away for an extended time.
    i usually cook my soaked beans in the slow cooker (outside in the summer) and they come out really great.
    *with one exception: kidney beans need to be boiled at least ten minutes at first to break down toxins and then they should be simmered.

    I like to drain my cooked beans, reserving the liquid. I strain the liquid through a fine mesh strainer into a saucepan and reduce it to almost nothing - nothing but super-concentrated flavour. Towards the end of the reduction, I add my acidic note, and return the reduced liquid to the beans. After it stands for a few minutes, I have tasty beans in a nice, thick sauce.

    If you put a bit of baking soda (sodium bicarbonate) in your soaking water, you can often get old beans to cook up soft. They will still be a little dull in flavor, but you can fix that with seasonings and other ingredients. Use about 1/2 teaspoon per 1-2 liters of water. If you put it in the soaking water, you don't get baking soda flavor in your cooked product.

      Thank you dear! I love beans too hehe. They are blue corn tortillas. They were actually the only tortillas available at my grocery store. I think other customers thought they were moldy 😆 so there was a stack of them left.

      RainbowPlantLife those tortillas look like pieces of denim cloth! I’ve never seen anything like them! Australian supermarkets are pretty boring....

    My grandma actually has a trick about cooking dried beans without soaking them. You put them in a pot along with some cold water, heat them until the water boils, then discard the water. Then repeat two more times. Afterwards, cook them as usual.

    I just scored a freebie Instant Pot on the curb that smelled of un-presoaked high pressure cooked beans. High pressure cooking un-presoaked beans might make the texture pretty nice, but it retains that typical toxic farty taste and smell of wrong cooked beans. I am guessing that my freebie pot got cast out on the curb because the beans were so bad. Beans needs soaking and low and slow. Instant Pot has delay cooking and slow cooking features especially for beans. I have found that not soaking the beans too long and cooking the beans in the soaking liquid low and slow with a potato, salt, cumin and garlic gives the best texture and flavor beans. Soaking too long and throwing out the soaking liquid tends to make the beans just blow apart when you cook them. For a lot of beans, 4 hours of soaking is enough. Bigger beans, garbanzos and thick skinned beans take longer. I had some really pretty weird little heirlooms with thick skins that took overnight. Baking soda can soften the skin, improving texture, but the potato does the same thing without leaving a nasty baking soda taste. Jamie Oliver recommends soaking the beans in baking soda and then tossing the liquid out and cooking in fresh water. I have never tried that, and I hate to lose the soaking liquid, but I got the potato tip from Jamie and I love it.
