I also live in Thailand, and have to adapt bread recipes to high ambient temperatures and a tiny oven, so this video is very useful to me. Also I live a one hour drive from where I can get decent (non-sweet) bread, so I am strongly motivated to learn how to bake. When next in Bangkok, I will take my wife for dinner at your restaurant.
I just started my sourdough starter but also only have one of these halogen ovens. I've baked cakes and such in it but never thought a sourdough loaf would work. Thanks for showing that it can!
If you have an extender ring for your halogen oven you can place the pizza stone on the low cooking rack so hot air can still circulate. This also allows you to put water in the bottom of the oven to create steam.

If you are going to bake bread in a halogen oven, remember that the weak point will be the base of the bread, if you use a refractory stone as a base you will solve part of this issue, if you don’t have one try to overturn the loaf to get a even crust. Per la temperatura ho portato il forno al massimo (230 gradi) ho inserito il pane, spento il forno per 10 minuti e poi continuato a 200 gradi per 30 minuti. I tempi e gradi variano da forno a forno

@@StefanoMerloWe bought the Smart Oven the same as yours and have baked bread in it already. Like you probably will need a bit of practice to get it perfect but a good start. We are on Phuket but as we divide our time 6 months in Thailand, 6 months in UK we bring our sour dough starter with us. Happy baking!
Yes, I did. Fruit cakes, chocolate cakes. We had fruit cakes from Christmas up to Valentines day. I put a pan of water underneath for moisture for the cakes

I made a successful loaf by cooking at a lower temperature with the lid raised higher and had a successful outcome.

I backed chicken buns in my halogen oven top was cooked fully but bottom side was not done fully. .what should i do to cook it dully
I raised the lid and baked at a lower temperature. Turned out well.

It helps in the halogen oven if you heat the stone to cook the underside . I just lowered the temperature and mine was fine.
