Lambi en sauce || Haitian Stewed Conch

  • Hi Guys!
    Welcome back to the channel! Today I am showing you how I prepare my Lambi en sauce or Haitian Stewed Conch. This dish is a Haitian favorite. The dish that most people really look forward to having.
    In this video, I show you how I clean and cook my conch. If you are a fan of this seafood, try my recipe. You will love it!
    Here are the ingredients:
    2 1/2 pounds of conch
    1/8 of a cup of Magic SALT FREE all purpose seasoning
    1/8 of a cup of onion powder
    2 Tbsps of olive oil
    4 cups of water
    Marinade:
    2 bulbs of scallions
    1 Red Bell Pepper(1/3 for the marinade- remaining goes in the pot)
    1 green bell Pepper 1/3 for the marinade - 1/3 goes in the pot)
    1 onion
    1 lemon
    5 to 7 sprigs of thyme
    Salt and pepper to taste
    1Tbsp of my garlic paste
    1 1/2 Scotch bonnet peppers
    6 Allspice berries
    3 Tsps of tomato paste
    5 to 7 Tbsps of Olive oil
    1/4 Tsp of Creole Seasoning
    Cook time: 2 hours 45 minutes

    I agree with you 100% regarding the red pepper and how well you were able to express yourself as to how and why. I also like the fact that you stuck with basics, fresh ingredients/No MSG, it's how authentic Haitian cuisine is and should be. Also, how you build up gradually your sauce/similar to '"arose" technique which is a lost art in today's cooking as well as slow cooking. I also love the fact that you were cleaning up as you go. To me it's how it should be done (am very old school). You made me extremely proud of your video presentation and consider myself to be a hard critic when it comes to Haitian cuisine and it's authencity. Continue to bring us video so we may appreciate our cuisine for ALL to enjoy. Be well and be blessed!

    When it comes to conch which is rubber in texture…a pressure cooker is used to “tenderize”Not cook it. Cooking comes After which is called STEW CONCH. 2 hrs of boiling is time, & $ wasted. That’s why we use cars and not horses any more. I will surely follow your STEW CONCH instructions. 😂🎉looks yum yum

    You did a good job cooking that chonch , why you didn't cook it first into a presto or pressure cooker,? Wouldn't it cook faster?

    You don’t cook conch like that’s gets ruined, all the benefits, from the ocean minerals, so on 😂😳😳😳
