Ingredients for the Lamb:
1 pound of ground Lamb
1/4 cup of red bell pepper
1/4 cup of green bell pepper
Half of a medium onion
1 Tsp of garlic paste/minced garlic
1Tbsp of chopped scallion
4 slices of Scotch Bonnet pepper
1 Tbsp of Tomato paste
1Tsp of fresh or dry Rosemary
1Tsp of Fresh or dry Thyme

    When it comes to conch which is rubber in texture…a pressure cooker is used to “tenderize”Not cook it. Cooking comes After which is called STEW CONCH. 2 hrs of boiling is time, & $ wasted. That’s why we use cars and not horses any more. I will surely follow your STEW CONCH instructions. 😂🎉looks yum yum

    This is how I grew up eating my moms griot! You don’t lose any seasoning in the oil, and the flavor is so much better bc it cooks longer and marinated even longer.

    I agree with you 100% regarding the red pepper and how well you were able to express yourself as to how and why. I also like the fact that you stuck with basics, fresh ingredients/No MSG, it's how authentic Haitian cuisine is and should be. Also, how you build up gradually your sauce/similar to '"arose" technique which is a lost art in today's cooking as well as slow cooking. I also love the fact that you were cleaning up as you go. To me it's how it should be done (am very old school). You made me extremely proud of your video presentation and consider myself to be a hard critic when it comes to Haitian cuisine and it's authencity. Continue to bring us video so we may appreciate our cuisine for ALL to enjoy. Be well and be blessed!

      I tried it but did not really like it. To me there was too many ingredients, which took away the full taste of the more. I usually make it in a more basic way without garlic, thyme or scallions and not even with parsley and I think that I will go back to my basic style. But you did a great job presenting it.

      @@adashofjessie1979 I would never use maggi. I followed your recipe to the letter but what I realize upon tasting the food is that there were too many flavors involved, especially the thyme, which in the end took away the taste of the fish. It made me realize that the less spice the better. I will no longer use thyme and will only use onions and nothing else.
