I feel like extraction methods apply to both in a big way right now with the invention of oleo citrate, super juice, nitrous extraction and on the coffee side extraction theory work by Gagné and Hedrick, which applies to Spirit infusion just the same as coffee (pressurized wood aging? Grinding? Alcohol as solvent in coffee?) there is so much to learn in these two gastronomical rabbit holes
