That's a rub, not a brine. A brine is liquid that the meat is soaked in, a rub is a dry mixture sprinkled.on the outside of the meat. They act differently on the meat and give different flavor profiles and texture.

Skinning, filleting and cutting out the outer part of the midline can really help reduce the less desirable flavors in trout. It's the only way I'll eat it now.
Thats got to be the water. I am fortunate enough to have inherited a Cabin adjacent to Federal wilderness in eastern WA state and there is an alpine lake full of trout. I just gut them and fry or smoke them and they are as good as salmon imo. Just gut them and take the heads off like this guy.

We steak up larger browns from Lake Michigan and smoke them very similarly. We do a wet brine with salt & brown sugar plus a little soy sauce, and smoke on my offset smoker for a couple hours on the tail end of a longer cook for beef or pork usually.

At a teppanyaki restaurant I worked at we de skinned but the head chef would crisp the skin. He was the only one who like the skin crisps until I came along. I put flour, salt and pepper in a large zip loc shake the trout skin on and pan fry crispy golden brown. The skin is crunch and amazing. Usually lakeside while still fishing.
When smoking trout , salmon, mullet, etc, surface area is the thing. I butterfly my fish or a very least, I split them down the middle to the tail, but always, I have the body cavity complete exposed.. still, your dip looks good.

I’ve cooked trout for so long I have a trick I do, once it’s cooked you can find the spin and peel it and all the meat comes off and all the ribs stay on the spine works every time.
Gut it and make sure to use your fi gernail to clean out the blood line. Wrap in tin foil with some lemon salt and pepper. Cook for 10-15 over the grill. My favorite fish.
