  • Delicious homemade granola that is clumpy with chunks of cashews and so aromatic with cardamom. It tastes heavenly and is so healthy. Enjoy it with milk and fresh fruit. Makes an excellent homemade gift that will be loved by all.

    ✅ CASHEW HOMEMADE GRANOLA INGREDIENTS
    3½ cups rolled oats (old fashioned oats)
    1½ cups nuts (⅔ cashew halves, ⅓ chopped almonds)
    ½ cup pumpkin seeds, sunflower, hemp, chia
    ½ cup dried coconut flakes, unsweetened
    ⅔ cup dried fruit (raisins, sultanas, dates, prunes, dried apples)
    ⅓ cup maples syrup
    ⅓ cup light olive oil, or avocado oil
    2 egg whites, whisked
    1½ teaspoon green cardamom, ground fresh
    1 big pinch salt

    00:26​ Preheat oven to 300 degrees F. Take all dry ingredients in a bowl.
    01:35 Whisk wet ingredients and add to dry ingredients.
    02:07 Combine it all very well.
    02:38 Spread on baking sheet and press it down using a wide spatula.
    03:18 Bake until lightly toasted and aromatic. Remove from oven and let cool. Break it up into smaller clumps.

    is it normal that the granola is sticky after baking?

      Not at all. It should be completely baked through, and have a crisp texture like in the video. Few things to explore would be the oven temperature (if it was hot enough, check and calibrate). The baking dish used - is it a baking sheet, what material. Then spread the mixture like in video, similar thickness. If it’s layered too thick then the baking time will not be enough and also not turn crisp. The amount of liquid added is another thing to check. The measurements and also size of eggs. I’ve made it numerous times and it turns out great.
