    I'm not sure if there is a more satisfying way to eat soft shell crab. This is a classic Thai preparation for fried soft shell crabs stir-fried with garlic and black pepper. In Thai, this dish is known as bpuu nim tod gratiam prik thai dam (ปูนิ่มทอดกระเทียมพริกไทยดำ).

      A well stocked SE Asian store should have it. It keeps fried items crispy.
