Easy Chicken Fajita Skillet | Chicken Fajitas w/ Rice | Tex-Mex Recipe

  • INGREDIENTS:
    1lb of boneless, skinless chicken thighs
    2 cups of rice
    2 tbs of tomato-chicken bouillon seasoning (or 2 cubes crushed)
    2 cups of chicken stock
    1 cup of water
    1 yellow onion
    1/2 green bell pepper
    1/2 red bell pepper
    1 dried bay leaf
    FAJITA SEASONING:
    1 tbs of chili powder
    1 tbs of smoked paprika
    1 tbs of oregano
    1/2 tbs of cumin
    1/2 tbs of garlic powder
    1/2 tbs of onion powder
    1 tsp of salt
    1 tsp of black pepper
    RECIPE NOTES:
    - Feel free to use the list of seasonings above or a packet of your favorite fajita seasoning mix.
    - Sear chicken on both sides over medium high heat, about 5 minutes per side.
    - Remove chicken, sauté veggies w/ salt and pepper until translucent.
    - Add rice and bouillon seasoning, toast until aromatic
    - Add stock and water, replace chicken over rice and add bay leaf.
    - Bring to boil then reduce heat to low, cover and simmer for 25-30 minutes until rice is tender and chicken is fully cooked through.
    - Turn off the heat, remove chicken and chop if desired. Fluff rice and serve w/ tortillas and favorite taco fixings.
