This week on Basics I'm making chicken wing lollipops and candied bacon, some of my favorite snacks for The Big Game.

Ingredients & Shopping List
+ For the chicken wing lollipops:
12-15 raw chicken wings
Frank's Red Hot sauce
Unsalted butter
+ For the candied bacon:
Thick cut bacon
Maple syrup
Brown sugar
+ For the churros:
Half stick (4 Tbsp) butter
1 cup water
3 Tbsp dark brown sugar
Pinch of kosher salt
1 cup all purpose flour
2 medium eggs, beaten
1 cup white sugar
1 Tbsp cinnamon
Neutral oil for frying
Special equipment: Pastry bag with a large star-shaped tip

I always use peppered bacon from the butcher for candied bacon. The flavor combo of the brown sugar and black pepper is amazing.

lemme tell ya it's amazing stuff. I'm slavic so candied bacon was very much a western thing, but I made it once and I ate the whole thing in one go. Haven't made it in a while.

I’ve been making wing sauce like that for years, I just like to add a little bit of minced garlic as well.
My brother used to make candied bacon and add would add a pinch of cayenne to each strip and holy does it ever take your taste buds on a wonderful rollercoaster!
Vital addition to candied bacon: grainy brown mustard. Gives a nice tang and spice, while complementing the sweetness and saltiness very nicely.

when i make candied bacon i add some hot sauce to the maple syrup and some black pepper to the brown sugar. it really adds more layers to the flavor. It is salty with some sweet heat.

a fun twist to the bacon candy is adding some pepper jelly of choice to one side when baking. adds a nice sweet kick
I take the candied bacon one step further by adding a light dusting of cayenne pepper to each slice after the maple syrup and brown sugar go on.

The bits cut off the chicken to make the chicken lollipops & wingetts would be great as an addition to chicken stock - it would help make a lot of the stock rich & jelly like.
I personally loved candied bacon. The only extra stuff I include is cayenne, black pepper, and a bit of honey as well.

The candied bacon leaves behind the most glorious burnt maple candy at the bottom of the sheet pan. Almost better tasting than the bacon itself.

Trying candied bacon for the first time today. My friends recently got a smoker and invited the whole friend group over for a “smoke whatever we can find at the grocery store” party and I’m bringing candied bacon to snack on while things smoke. Should be a great day
When I eat bacon I dip my bacon and brown sugar anyway so candy bacon is just extra steps for me! (If you have not tried bacon dipped in brown sugar I highly recommend it!)

I’d suggest adding some cayenne pepper and some red chili flakes to the candied bacon. Sweet, spicy, salty and even better than just regular candies bacon.
