I've read all sorts of schematics for flavour profiles and eventually settled on:
    1. Sour: spaghetti, or any dish with tomato paste as its base. Polish hunter stew (wine, sauerkraut)
    2. Cream: Fricassee, butter chicken
    3. Pepper: jerk, piri piri, vindaloo
    4. Umami: soy based stir fry, faggioli (parmesan based)
Then there's dishes that don't seem to fit any mould. Like how would you classify an Irish lamb stew? I would put it in the 'cream' based category since it has a mild, sweet, buttery taste.
