Spicy Pickled Carrots - 52 Weeks of Canning
2lbs of carrots
1 1/2 cups vinegar
1 cup of water
1 tbsp sugar
1 tsp salt
in each jar place
1 tsp pickling spice
1 tsp red pepper flakes
1 clove of garlic
Water Bath for 15 minutes

I canned carrots this week. I canned 4 Maple glazed, 4 honey glazed, and 6 plain. I had a few carrots left and decided to try your recipe. I just took them out of the canner. All have sealed. I have three beautiful pints of pickled carrots!! 🤗 ...and now we wait 2 weeks!
Made this last week and everyone loved them. Making more today!

I thought that carrots were a low acid food that had to be pressure canned.?
She added vinegar so now it has acid so no need to pressure can.

So we canned mushrooms for the first time. I could not bear to throw out the broth from the simmering of the mushrooms. I strained it through cheese cloth and we canned it. I used some today to cook rice in. Oh my word! Delicious!

What a great idea, i am definitely going to try this, think i'm gonna try using Cosmic purple carrot or rainbow carrots, and as a single person in this household i always have trouble using them up before they go bad så no more foodwayst eighter.
I was just gifted 25 lbs of carrots. Timing of this was perfect. I'm setting aside 5 lbs to pickle with some jalapenos. Yum!

How long will these last if they go straight into the fridge without a water bath?
With the 15 minute water bath, do these end up crunchy still or soft?
What is the minimum time for a water bath with these if I want them really crunchy still, but still safe to be stored in a closet?

Came looking for other people’s recipes to try and find different twists on a old staple, and just want to say that the carrots should be sliced, and get rid of those red pepper flakes, put sliced or whole jalapeños in there instead.... and some sliced white onions....

How long did you dip the the jar in the boiled water for sealing? Is it boiled water or hot water after boiling?

I made a tester jar and loved them except they aren't real crisp. Do you have any suggestions on making them more crisp. I'm using home grown carrots 🥕. FYI purple carrots turned orange my liquid turned purple tho.

Just curious how do you store your lids and rings. I keep overgrowing my shoe boxes.
The Sticker Farm SM just what I do with my rings. Since I buy potatoes in 40 pound boxes, I store rings in the box. The rings fit through the opening for your hand. I reuse, for one season, the same 24 rings as I don’t leave rings on to store the food jars. My flats are stored separately in 4 liter heavy plastic boxes such as restaurants use for raw vegetables (Sam’s source). Hope this gives you an idea.

This question is unrelated to spicy carrots😀. I just canned 7. Quarts of pinto beans for the first time (drumroll please). However, I now have 7 quarts each which have 3 inches of of very soft beanson the bottom, followed by 3 inches of bean mush, topped off by clear (ish) liquid. I soaked the beans over nite but did not precook and followed the USDA guidelines for time and pressure. Any suggestions what I did wrong. Thanks. By the way those carrots look yummy.

Don't hate me but since I've tried purple carrots a couple of times now and they seem to fade badly when I use them with vinegar. On a brighter note I'll definitely be trying this recipe as some how I have 2 extra bags of the small carrots and until this lovely video I'd no clue what I wanted to do with them.
I was wondering something similar. The one time I tried purple carrots, in a pressure cooked beef stew, they turned black. They were very unappealing. Does the brine help yhem keep their purple color?
Also.. a thanks to you Leisa (spelling?).. Over the last two days I jarred up 9 quarts and 15 pints of ugly chicken.. that started off as 25 lbs of dark meat. I diid half of them boneless. I want to open one up to taste... but.. sigh. I put so much time into preserving them till a much later date.

Thanks Leisa... Well... I didn't have a stock pot either so I just ordered a stainless water bath canner with basket on Amazon... so both the All American Pressure canner and this water bath canner will come soon... I am on a search now for more jars and lids... wish me luck...

On your recipe, you added salt to the carrots? You did not add it to the recipe above.
The salt is added to the brine.
You demonstrated by putting a teaspoon of salt in each jar, but the recipe lists 1 teaspoon total. Which is correct?
For me a teaspoon per jar would be inedible. Way too salty! I'm guessing she misinterpreted the original recipe. But I could be wrong.

THEN SHE MADE QUARTS OF YELLOW LITTLE CHILIES BUT SHE ALSO HAD 2 QUARTER'S OF A WHITE ONION (TOTALLING A HALF OF AN ONION), CARROTS COINS IN THERE ABOUT A 1/2 INCH THICK. I REMEMBER I SAW OREGANO AND CORIANDER SEEDS. WHAT OTHER SPICES DO YOU THINK IT WOULD NEED? AS ALWAYS THANK YOU SO VERY MUCH!
