Fermented sodas are definitely the best! Word of advice, regarding what's good for your gut, according to all papers I've read pretty much all sweeteners that won't break down in the fermentation process are likely to induce a dysbiosos in your gut. To make up for that, you could sweeten the drink right before drink it. There are other options like sweetening with inulin or tagatose instead of sugar, but they're just too much of a hassle.

The last batch I bottled I left it in a bottle of 2 weeks after I thought it was done fermenting and it fountained on me when I opened it. I use a carbon or a glass jar with an airlock so I don't have to burp the bottles when I transfer the liquid to the bottle. How do I stop the fermentation while keeping the fizz?

likely stevia or any sweetner w/o sugar, honey contains sugar (and can turn into mead/alcohol)

If you're using tap water there's probably traces of chlorine you should try spring water

It’s possible your yeast died and the gas was just from when it was still alive. You may want to try with a different ginger bug
