      likely stevia or any sweetner w/o sugar, honey contains sugar (and can turn into mead/alcohol)

      Honey will potentially kill the bacteria that induce the fermentation, so I don't recommend it.

    should definitely be sweetening to taste before drinking instead of using sweetener

    Fermented sodas are definitely the best! Word of advice, regarding what's good for your gut, according to all papers I've read pretty much all sweeteners that won't break down in the fermentation process are likely to induce a dysbiosos in your gut.
    To make up for that, you could sweeten the drink right before drink it.
    There are other options like sweetening with inulin or tagatose instead of sugar, but they're just too much of a hassle.

    @jhonny. I tried making apple soda but even after leaving it for a week i m not getting the fizz, how can i get the fizz these is gas when i open but no fizz or bubbling

      If you're using tap water there's probably traces of chlorine you should try spring water

      It’s possible your yeast died and the gas was just from when it was still alive. You may want to try with a different ginger bug

    So I have ginger beer still fermenting for a month now and it's still releasing gas. The last batch I bottled I left it in a bottle of 2 weeks after I thought it was done fermenting and it fountained on me when I opened it. I use a carbon or a glass jar with an airlock so I don't have to burp the bottles when I transfer the liquid to the bottle. How do I stop the fermentation while keeping the fizz?

      Its gotta go in the fridge for that, I believe.

      yeah cooling it really really slows down fermentation

      So the drink will just taste sour and a little bitter? Sounds gross.
