I'll help out those folks who are watching this video and wondering how you get the lever onto the plunger, and then the roll pin through... that's the most critical part and perhaps was edited out due to an R rating for language? :) You can put the new plunger and lever on with the cable removed from the dash board... Anyway, there are two ports on the back of the cable housing, and you need to pick the rubber plug out of the port that isn't being used, and take a nail or a punch and push it through that hole, and this will compress the spring, and allow you to line up the lever and get the roll pin through. It's easier if there is a second person, but I did it by myself, just pressing the head of the nail against the ATV's fender to compress the spring and extend the plunger far enough out to get the lever lined up and push the pin through. It'll help to have a small pair of Channel-Lock style pliers ready to span the pin and lever, and press the pin through that way.

Pincher pliers, steel wire/nail for guidance, blood and alot of ugly words... But now it's done 🎉 Noob tip, fasten (press) the pin in the lever before installation, just so it sticks.
You didn't actually show how you did it, which is what we needed to see. We already know what they look like, you didn't teach us anything on how to do the repairs.

Do you really need a part of removing the broken plunger from the body and putting the new one back in? If you can't figure that out you probably shouldn't be working on it.

If want to just take the little piece off the sled to put a new one on. Its not broken i was to put a different one on... just the piece that is labled with the choke symbole... how do i take just that off?

You can do it.
It's not as easy as it was made out to be. Getting it apart was easy but putting the plunger back in the rectangular part on the cable was a bitch.

i grabbed mine with both hands and gave it a light pull and it did not come apart.
You may need to take a small flat blade screwdriver and break the seal between the 2 parts.

You would just remove the pin that holds the lever to the plunger assembly.

Cant get 2 pieces to seperate
Try heating the assembly up with a blow dryer to warm It up. It's a tight fit, but it will come apart.
why do u only have one cable
The single cable goes into a plastic box where both choke cables are inserted into. When the lever is pulled, it activates the other cables.
