Soft Oatcakes - Better than store bought

- Oatcakes are always nice, but to me, they're sometimes just a little too hard and dry. It's nice to have your mouth not dried out instantly and to enjoy the flavour without suffering the jaggy edges of a rock-hard oatcake. Make them at home yourself with simple cupboard ingredients and you can serve them as soft as you want.
Ingredients:
300g of rolled oats (might be called porridge oats, they need to be flat to cook in time)
25g of fat (oil, butter, beef dripping)
2 pinches of baking soda (i may have said bicarbonate and used bicarbonate in the video...)
Keep a cup of warm water handy and add a few tablespoons at a time to help bring it together
1/2 tsp of salt
The oven goes to 150C/300F
Blend the oats a little bit in a food processor to a size you like the look of
Reserve a cup of the blended oats
Mix in your chosen fat and stir to combine
Add the water a little bit at a time to hydrate everything and bring it together, otherwise you'll have no hope of rolling it out
If necessary, leave to rest for a few minutes to allow things to soak
Sprinkle your surface with the oats to roll it out
Keep adding the reserved oats as and when needed to stop everything from sticking
Roll it out to your desired thickness
Cut into shapes
Place on a baking tray which has also been sprinkled to stop things from sticking
Bake for 30 mins, check if they need longer.
