    Great hack for weaning off soda (or rather, converting soda into a nutrient dense beverage): I make two batches of kombucha, one with black tea and one with green tea. Black tea is stronger, and I save that for mixing with fruit juice to get the Kombucha™️ flavor. However, the green tea flavor is very mild and to flavor that during the phase where it gets carbonated... I'll use soda! Some brands are preservative free, or use cane sugar, I try to steer towards those brands. That being said, I've found that my kombucha can fight past the preservatives in a Dr. Pepper and ferment it. This "dries" the soda out so it's not as sweet, and then it's full of probiotics! Plus, it stretches the soda. I use only about 1/3 cup per 16 oz bottle of kombucha.

    Thanks for sharing. We're doing well. I upgraded my bedding as my old ones were worn out and had holes in them. I got more page protectors and a larger binder for my general notes so I can move my journal to the slightly larger binder my general notes were in. Daniel is now going to a different middle school. He is happy about it as no one there claps in his face like at his old school. He misses some of his old friends though.

    As a stay-at-home wife and mom of young children, I really appreciate all the work you put into this, Mary. I'm looking forward to using this checklist without the feeling of being so overwhelmed! Moving to traditional foods is a bit intimidating to me, especially since I feel as though I'm a novice at cooking. However, your videos have made this transition so much easier! To go along side this, is there a traditional/whole foods website or cookbook you recommend for family meal recipes? I'm not great at coming up with ideas and would love your input!

      I actually have that one! I bought it a couple of years ago and got discouraged after burning the meatloaf recipe (whoops!). I suppose it's a bit of a learning curb for me since everything is made from scratch, and it'll be trial and error to see what my picky eaters will like. I'm willing to dust it off and give it another shot though because I know it's got to be super healthy. Thanks for your input!

    I eat one-ingredient nutrient-dense foods like: tomato, leafy greens, onion, garlic, Mexican chiles (I'm in Mexico, por eso), cilantro (coriander), plenty of salt, spices, vinegar, and the meats like beef, goat, ram, pork, chicken, fish, &c. I have lost 40 kilos in 10 months! (88 L).

    I made apple Cider vinegar two years ago when I was making my apple butter I soak the peels in the cores etc. this might sound silly but then I was scared to use it because what if I did it wrong or I have something bad growing in there and I make myself very sick. So it has been sitting in the bottom of my cabinet for two years now lol probably no good now huh. But that is a fear I have when fermenting foods. It’s important to me to incorporate them into my daily diet, and I have a lot of belly problems hopefully it will help. But how do you know that it’s good and you don’t have anything bad that will make you sick growing in these ferments? I also made water kefir three or four different times and threw it out because I didn’t wanna make myself sick. But I can’t say within the last month I’ve made three batches of kombucha, I drink all of it, and it was delicious so I am making progress. But how do you know it’s not growing the bad pathogens? Thank you.

      Hi Mary, That is a great question. The good news is that most ferments are very acidic and it can be hard for bad bacteria to survive…especially when the good bacteria proliferates. You can use pH strips to check to make sure that your ferment is acidic. Also, your nose is helpful too. If something smells yeasty and pleasant…that’s a good sign. If it smells foul or rotten then discard it. And if you see any type of mold, get rid of it!! Love, Mary❤️🤗❤️

    I have a question regarding sour dough bread making as well as ferments. If a person has an intolerance to vinegar are either something that the person would be able to eat?

      That’s a great question. I’m not 100% sure but neither naturally fermented foods or sourdough have vinegar in them. They just have a sour taste. Love, Mary

    Mary I would like to ask you a question if possible. I am looking at some recipes in one of my favorite cookbooks and some of the recipes use dry milk solids. I have never heard it referred to by this name but am assuming this is the same as dry powdered milk. Is this correct? Thank you for your help. Love, love your videos.

    Hi Mary! I was thinking of you today as I was making toast, made from your sandwich bread recipe. A clear indication of how much healthier homemade bread is versus commercially made bread is that when toasted on the same setting, the commercial bread will burn because of the high sugar content it has. I hope you will do a video on making rye bread soon, which is my favorite, and yet, I haven't found a good recipe for it yet. Thank you for making these terrific videos!

    I hate it when I go into the kitchen to look for food and all I find are ingredients. 🙃
    People prep too much.
    Try to keep and store to much for their actual needs.
    First thing is determine what you like to eat and how much of that you need.
    Determine the time period you want to cover.
    6 weeks, 6 months or gardening season to gardening season.
    Have basic rice and beans as well as some canned meats to keep you alive in a pinch.
    Keep it simple.

      Hi Rebecca, I understand completely. I always have rice on hand and lots of canned fish - like kippers - that we enjoy tremendously. We frequently have the rice cooker going so all we have to do is open a can of fish and add some fermented veggies in the fridge as a side and we are all set! Love, Mary

      Sweetie, some people think cooking is impossible let me tell you a secret. Get a Crockpot put chicken, pork chops, pork roast or Chuck roast in the crockpot and cook on low while you are at work and bingo you are a marvelous cook . Add potatoes, onions and the celery leaves and beef stock and you are a cook. With the left overs make beef stew. Just a love note from an old southern lady.

    Do you can bone broth or store in freezer? I,used to help my grandmother make homemade jelly and jams, is there a good source to learn canning home made food such as bone broth?

      Hi Linda, I don’t home can bone broth because the high temp will damage it. I freeze mine. As to a good book for learning about water bath canning and pressure canning would be any Ball Cookbook.     The chart is a fantastic idea thank you so much I am sure it will help me to stay on point and see my progress. I have made my own sauerkraut. I had a jar in the refrigerator for several months. I took it out the other day and it was terrible so I assume it fermented for too long it has been at least six months. I am making more today so is it better to freeze sauerkraut or can it? I am concerned that it kills all the living good stuff in it if I can it. What do you recommend to preserve it a little longer thank you!!

      Great question! I would freeze it. A bit of the good bacteria will die off but not all. If you home can it, you will kill all the good bacteria. You are doing great!! As to the sauerkraut that went bad in your fridge, yes, some say it can last 6 months but I find that it is best eaten within 2-3 months. Love, Mary

    The game changer for me on the traditional foods journey was the sourdough starter. It’s goof proof. I sometimes forgot to feed it, it didn’t look bubbly, but I used it anyway. I made pancakes (instead of using the mix) and won everyone over. Made the Sloppy Joes and no one wanted to try it. Then the store ran out of the canned stuff. Starvation kicked in and the big kid and little kids tried it and hoovered it with the pancakes (no time to make buns). Start small (flour and water) and it won’t be so overwhelming. Keep trying, carry on.

    Looks like I am way early in my journey 😂 I make chicken and chicken stock at home and a basic orzo soup (my mom always made those). I buy less and less processed food and eat more produce. Learning how to cook/use beans and mushrooms is essential during lent. I'm not a fan of sourdough flavor but I have a few bread recipes under my belt and a couple that I still want to try. This leant I'm experimenting with making my own vegtable broth instead of store bought. I like to expand my baking skills specially if I can make it more nutritious compared to store bought options.

    Sorry, second comment. Thank you Mary, I totally love making ferments now. I also purchased a dehydrator and it's being used overtime! I've been cooking since I was 9 years old. However, I have learned so much from you. I hadn't made bread for decades and actually felt nervous about it. The time stamps are so wonderful that I made my sandwich bread with you at my side. I am no longer buying any type of bread anymore and my husband Bob loves my loaves, hamburger buns, and hot dog buns. Love, Debbie

    I think I remember you saying at some point that you were a city girl? We’re looking at moving to the city soon and I’ve been wondering how you’d stock your four corners pantry with limited amount of space?

      I understand completely!! Yes I am from NY and lived and worked in NYC. I had plastic bins under my bed - and since I was single with just a handful of dishes - I devoted some of my kitchen cabinets for a "pantry". I also used my china cabinet in the eating area to display food! LOL!! Plus, I was blessed to have a regular sized fridge so that was great. Hope this helps. Love, Mary

    This is a great list. I have been working on becoming comfortable with one thing at a time. Chicken roasting, broth and soup is down. Have a basic knowledge with my sourdough. Now working on my ferments🥰 thank you for sharing.

    Hi Mary from East Yorkshire, England. I have been eating low carb healthy fat for a couple of years now. I started making your recipe for apple cider vinegar and always have a batch on the go. My husband loves it he drinks it every day. It has saved me a lot of money too. I've also made bone broth and used it for soups. I like the idea of the check list I will print it off thank you.

      I think intermittent fasting is terrific and a huge help to assisting me in losing weight - and sleeping better (I try not to eat anything after 4 or 5 pm). As to keto, I hear so many people swear by it but I have a very hard time sticking to it, so instead I follow the Nourishing Traditions way of eating combined with the advice offered by John Douillard in The Three Season Diet. Both of those combined with the intermittent fasting has helped me tremendously! Love, Mary

    I always appreciate your focus on staying within your budget and transitioning a little at a time. I have a casin allergy myself so even raw milk products are not an option for me but I have found some really great nondairy yogurt recipes from soaked nuts made into milk which I have been making at home. They save a ton of money, especially over the store-bought nut milks and yogurts. Having worked on that and other things I can now move on to buying in bulk more items options that will allow me to make my own grain-free flour that I know my own body does far better with and are a lot less expensive than the store-bought premade options.

    The problem I have with the transition is the fact everything (process or recipes) are always made for families. My day is: mornings I drink 2 cups black coffee and 2 pieces of toast (with butter, peanutbutter or hummus) I eat one meal at about 4 in the evening and about 9 at night I have some fruit. I end up freezing most things to keep them from spoilage. Doesn't that kill the good bacteria? 🤷‍♀️ I'm so confused.

    Mary, I have been on this journey for quite awhile and still have not "arrived " partly because of my own shortcomings and partly because sometimes it's difficult to get hubby on board . for instance I am proud of my winter soups made with bone broth. a small chicken (the whole chicken) and lots of veggies . Hubby will have one small bowl and apparently enjoys it but I dare not mention soup the next day (:-) My soup is so rich you could slice it like jello when it's cold . I made pineapple vinegar , used the litmus paper etc, but he thought it wasn't strong enough . I get a little frustrated but looking back over the years I realze we have come a long way . They say in the rural areas of Jamaica when the avocados fall the pigs have a feast . I love avocados I have finally been able to get him to try a tiny piece ( But I cook with avocado oil) plus olive oil. :-) You have been such an inspiration to me and I really appreciate you and your channel !! Now that we are heading into warm weather I have decided smoothies are my best bet :-) I think I can get a lot of good stuff in a smoothie !!
