A brief explanation on lightsabers (to my understanding):
Lightsaber colours relate to your affiliation with The Force - red is basically for bad guys, green and blue for good guys (there are other colours, but you'll find out through watching the films and shows).
The blades are super-heated plasma, so they have little physical substance, but can cut through anything with a melting point lower than the temperature of the blade. This is also why wounds don't bleed - the blade cautarises the wound, preventing bleeding.

Probably already heard, but, lore-wise, the reason for Sith sabers being red is that the Kyber Crystal (essentially it's battery, and the source of the blade) is bleeding, and fueled by pure hatred. This is opposed to other saber colors being because of a Jedi forming a mystical bond with their crystal. Because of the method of pouring pure rage and hatred to corrupt the crystal, pretty much all Red Sabers are wielded by Dark Side Force Users.

One problem with trying to watch the older Star Wars movies is how many different versions you'll find; every time the trilogy gets re-released, the studio forces some weird 'edits' or 'updates' into it. The original 1970's-80's theatre version is different from the videotape version, which is different from the 1990's theatre re-run, which is different from the DVD ver-... you get the idea.
The _answer_ to this problem is *Harmy's Despecialized Edition* , which can be streamed legally and freely from The Internet Archive. It's the original three movies, bumped up to HD quality, but edited to match the original theatre versions.

So glad you're about to watch Star Wars movies ! Can't wait for this ! There is 2 ways of watching the movies, in my opinion both are "valid" depending on what you want/expect : if you want to see in the original order, how it got released, then it's IV, V, VI, I, II, III, and Rogue One at the end (you can watch the VII, VIII and IX after but they're not the fan's favourite ^^"). And the second choice, if you want to watch the STORY in chronological order, then it's I, II, III, IV, V and VI (obviously). Just gotta say seeing how you appreciate the "better quality" and production i would advise you to watch in the first order, because if you watch the I, II and III first, you'll be kinda disappointed when starting the IV (the IV has been made in the 1977, when the number I has been made in late 1999). Do as you wish bro !

Honestly, there are two places you can start.
    1. Go with Release Order. This is my personally recommended viewing order. That is Episodes: 4, 5, 6, 1, 2, 3, 7, 8, 9. Watching in that order gives you context for a lot of things going forward. This was always an intended order. Though once you're done with the Prequels, I recommend taking a break from the movies to watch the 3D animated Clone Wars series. It really helps fill in a lot of the gaps that the movies didn't have time to go over.
    2. Go with Numerical Order. Not what I usually recommend, but it's not wrong to go this way either. You see the characters and situation in the galaxy grow from beginning to end this way. Plus, you get to see the Prequels first, which people like to hate on, but I think they're really cool compared to others like 4. Just...try to ignore the horrible romance. Because really, that's the thing most people think of and it's easily the worst parts of those movies (especially in 2).

Personally, I've always loved the "flashback" order to watch the movies. 4,5,1,2,3,6
I think it maintains the original feeling of easing you into the universe, that's what makes the original trilogy a good starting point. However, I feel that chronological order has a larger emotional impact in regards to Anakin's full character arc. In between episodes 5 and 6 is the perfect place to go back and see how Vader came to be, right after you learn of his relation to Luke.

The answer for your questions on lightsabers aren't discussed in the movies, but the Clone Wars does go into explanations of how one is constructed. Their colors aren't really answered anywhere directly, though. But it is explained through other media! The lightsabers get their power from a crystal called a Kyber Crystal. Once a Jedi-to-be awakens the crystal with the Force, it emits a light that is based on their personality and fighting style. The associated colors are usually: Blue, Green, Red, Purple, Yellow, and White, and they each have an associated meaning. Though other colors exist in the spectrum, they just aren't as deeply explored.
In reality, the colors have more practical meanings. Blue and red were used in the original to make the obvious hero and villain connections. Green was added later because there was a lot of blue in the background and green stood out better. Purple was actually a request from the actor who played Mace Windu, and they accommodated. xD
Fun fact, the canon explanation for a red lightsaber's color and why it's exclusively a Sith color is because they literally make the Kyber Crystal "bleed" through the Force through their anger and hate.

Fun Fact: The lightsaber colors have a meaning to them...
Blue/Cyan Blue: Jedi Gaurdian best at lightsaber combat and mid force level.
Green: Jedi Counselors who are Jedi with a strong connection to the force and are good diplomats, they prefer to use the force than with a lightsaber unless it was necessary.
Yellow/Orange/Gold: Jedi Sentinels are tied to this color, they are considered the spy section of Jedi and those who hunt down Sith and destroy their artifacts and holocrons so that no jedi that turns to the dark side will ever learn the sith knowledge, skill in combat, the force powers that associates with dark side of the force.
Purple: I don't know if there's a technical term for the force users, but in a nutshell this color is only weilded but force users who can use both the light and dark side of the force. Only two Jedi are known to have used a lightsaber with this color: Reven and Sam L Jackson's character: Mace Windu.
Red: Pretty self explanatory it's used by the Sith, their lightsabers color is only obtainable if the kyber crystal (the crystal that determines the color of a lightsaber) they get from killing their first Jedi and make it "Bleed". Basically, chanelling all the fear, anger, hate, suffering from the sources darkside of the force, and bleeding it of its original color and then becomes red.
These lightsaber colors are very rare, but only two of them have a meaning. There is Bronze, which there has been used only by one Jedi: a Wookie named Lobacca.
Silver: These belong to the Bendu: Force weilders like those who can use both light and Dark Side with a purple lightsaber, but there's one major difference: These Silver lightsaber users are the Neutral side, the grey area of the force to be precise.
White: These are only used Jedi who kill a Sith and basically heal the lightsaber color, but there's a catch. The lightsaber will turn to white and will never any other color ever again. Or the least likely possibility that a Sith would decide to abandon the dark side and go back to the light and use the Light Side of the force to heal their lightsaber crystal.
Black: This is the most rarest lightsaber color of all. These are only used by one type of force weilder, a sith who falls way further into the Dark Side and will answer to no one. They will have no master to learn from and will trust only themselves and will anyone in their way. There has been only one Sith that has used the lightsaber color, and that is a Sith named Darth Maul (the one with double bladed lightsaber). There has been only one depiction of this lightsaber color and that is a lightsaber called the "Dark Saber" an ancient lightsaber that was locked away in the Jedi Temple. Eventually, it was stolen by the Mandalorians who we know can't use the force but they can still go toe to toe with a force weilder. Maul killed Pre Vizsla a Mandalorian patriot who had it in his possession.

Lightsabers are essentially plasma blades. Think basically the blade is made out of the same stuff as the sun.
They are powered by Kyber crystals that live in the hilt, or handle, of the lightsaber. The colors do have meaning but, there's too much detail to go into here. What I will say is red is not a natural color for Kyber crystals. The user has to "bleed" the crystal for it to turn red, which is why they are so prevalent with users of the dark side of the force.

The first fight you got curious, so I'm gonna explain. The darth vader is anakin skywalker. The Old Man is Obi-Wan Kenobi. Obi-Wan and anakin were close friends, obi-wan is 17 years older. So one day Anakin turned evil, killed kids and went with evil emperor palpathine (the old man in the last fight). Anakin Attacked Obi-Wan and started fighting. Obi was turning back, he didn't want to fight, but he had to. After a long fight, Obi-Wan won by a great advantage. Anakin was burnt in Lava and Obi left him there. Hours later phalpatine and his army came to reacue anakin, and since he was burnt, they made a robot out of him, which gives burnt anakin energy and hides his face, because it's literally burnt down. And So, that robot's name is darth vader, because everyone who joins the dark force and goes with emperor phalpatine gets a name that starts with "darth" (darth Vader, darth Mole and others). So many years later, when obi-wan (the old man) was 63 years old and anakin (darth vader) was 46, they fought again, and seing luke skywalker (the blonde long hair guy), obi-wan stopped during middle of a fight and made darth vader kill him, for luke to have enough hatred to defeat the dark force. And also, the last 2 fights were Darth Vader vs Luke Skywalker, and Darth is the father of Luke, so it was Son vs Dad.
You also got curious about why Obi-Wan disappeared. It was because Theres a group called Jedi where only are kind fighters, and who ever dies, disappears. The leader of Jedi is Yoda, the green little fighter, which died by old age, since he was 900. And He is actually the strongest Character in Star Wars.
    And For Debates-
    Yoda>Obi-Wan>Luke>Phalpatine>Darth Vader.
    Hope you understand now, Aimin👋

If you're planning to experience this franchise, I strongly recommend to watch it in Release order rather than Canonical order since there are things in the Prequel trilogy just work better as call-backs to the Original trilogy than they work as foreshadowing. And also you don't have to deal with going from the special effects of the 90s/00s suddenly jumping back to the ones in the 70s/80s

A small In-Universe fact: When the first movies came out, "Darth" should've been Darth Vaders First Name. But i think, some fan came up with Novels, which played long before the movie era and he introduced the fans to the "Sith". They were force useres, who mostly used only the dark side of the force. And most of their Leaders were known with the Title "Darth". George Lucas (the creator of Star Wars) liked the idea and made it canon, so that every Sith from there on has the Title "Darth" and then a Name with some meaning.

If you do decide to watch them (and I HIGHLY recommend it), this is the best order to watch them in:
    Episode 4: A New Hope
Episode 5: The Empire Strikes Back
    Episode 1: The Phantom Menace
Episode 2: Attack Of The Clones
Episode 3: Revenge Of The Sith
Episode 6: Return Of The Jedi
    Episode 7: The Force Awakens
    Episode 8: The Last Jedi
    Episode 9: Rise Of Skywalker
You'll understand why this is the best order once you see them.
