What is the Difference between Good and Bad Fit in a Bowling Ball?

I have a very difficult time getting any kind of idea what balls do at demos because 1. I throw 16 lbs and 2. I have extreme reverse finger pitches, so the presumably 0 pitch demo balls really hurt my hand. Any advice?

I live in California, do you know any specific place where I can demo bowling balls?
