- hey, I thought I'd share this Lesson from a course we did back in 2017- heck where does time go?? Anyway back in Feb 2017 myself and Billau (Billy) ran a one day course at his place and hosted a number of students to teach them all about authentic Homestyle South Asian cooking. In hot countries, salt is a very important way to re-hydrate, and helps prevent hyponatremia caused from excessive sweat.

I always find that you could make 2 curries exactly the same and they can still be totally different so you have to add spices accordingly to get the right taste rather than exact measurements.

This is a great vid, kinda goes a long way in saying you can cook the same curry with exactly the same ingredients and it won't come out the same ever time so you have to try and balance things on the go....one thing is certain though, it's always better the next day:)
