    Nice practical tips as always.... I love scraping my alu pans with my alu chef spoons....metal metal heavy metal LOL!!! It drives my partner crazy. Scrape that aluminium pan!!!
    I removed the heat sensor on my burner a couple of months ago...much better now. Yes oil and fire!! Love the explanation about creating smokiness through heat.
    Now looking forward to Tuesdays!! Cheers Julian.

    always wondered how you controlled the heat on the burner Julian, you explained it well, basically yellow flame is low and blue is fighter jet afterburner :-) great vid Julian been following since ctg days keep it up fella!

    Great basic tips Julian and thanks for the time and effort. I bought a burner I few years back and used the ring part in a homemade plant pot tandoori oven which no doubt I'll dig out again in the summer!

    Great video Julian. The techniques and hardware make a lot of difference. I really miss my gas cooker where i used to tip the pan into the flame and boom, there's the BIR flavour!
    For more reading on the smokiness effect, the Chinese talk about it the most with their "wok hei" concept. It's pretty much the same thing. Recommended reading.

    Even after buying the ebooks and watching many many videos one thing I struggled with when I first started out was how long to cook out the basic ingredients, garlic, ginger, tomato pastes, and how high of a flame was needed.
    A break down of each stage of a curry would help alot of people new to curry cooking
    Been following the channel for many years and always learning more each time.

    Great explanation, thank you. I bought an (Italian made)aluminium pan recently, but it has a type of almost 'rubbery' opaque coating on it. Can't find any in Republic of Ireland and ones on Amazon don't ship here. 😒

    Hi Julian we are enjoying the new videos and really helps tie in with your books. I have just checked the burner out, saying it comes in a 7kw? did you say best to buy a 8kw? Looking at your table for the burner, it's a tad lower than norm to take the height of the burner? much appreciate these measurements Many Thanks.

    Pro tip: An aluminum salt is widely used to clarify water in water treatment facilities and has been for decades.

    What gas do you use .propane or butane?. I've been using propane with good results cheers for the tips

    I asked the question a couple of times about using a burning like this indoors and people have gone up the wall with health and safety issues and comments of you should never use this type of set up indoors, ventilation, explosions, etc! What's your take on this as I also have a similar burner I would love to use in my kitchen?

      Hi Mark, butane or propane is different than domestic gas in that you do require more adequate ventilation. When the flame burns yellow you can increase danger of carbon monoxide poisoning. When I use mine in the ‘curry shed’ I have the double doors open and the windows. So better outdoors really. Just be careful, make sure you have very good ventilation and perhaps invest in a carbon monoxide tester (inexpensive)

    You've probably seen this same question several times in the past so I'll apologise in advance in anticipation of you having to repeat a response BUT: Where, on this Gods Earth, might I find a chefs spoon? There are plenty of aluminium pans to choose from but I can't source a spoon. Any links or suggestions would be appreciated. Thank you!
