I did not make this video, but I am certain that fermentation (oxidation, actually) occurs during rolling and during the period after rolling where the leaf is allowed to rest for several hours. Oxidation is then stopped by roasting in the wok.
Last step - pour boiling water just to realise it cannot brew at all... This is tragic tea.., but home made! All the best! I'd like to try to make my own tea too!
You should let the tea rest for a few hours - otherwise you will just break the leaves and destroy flavor - as you did. You can clearly see juices flowing from broken leaves. :( You ruined it all... But, you have perfect hay for your horse or donkey. However - oils from broken leaves help you with frying the pan. Maybe it's not tea as we know it, but it can taste funny? even can be tasty. I'll try it - if I will be able to grow tea here in Northern Europe. :(

It will be helpful if you can mention the quantity of leaf plucked, rolling time, oxidizing time, pan-frying time, and sun-drying time.

Bruising helps with oxydisation. If you dont then you will make a primitive form of green tea
