  • The name Colcannon comes from the Irish word "cál ceannann," which means "white-headed cabbage."
    Traditionally in Ireland, this dish is served on Halloween, with hidden fortune-telling gifts inside the potatoes: a gold ring meant you would get married within the year, a coin signified wealth, and a thimble or button predicted divorce.
    But we don't believe in fortune-telling (especially the bad kind);
    we simply prepare this delicious and hearty dish for a family meal. Colcannon pairs well with beef or roasted lamb.
    In less prosperous times, butter was not accessible to ordinary people,
    so the mash was topped with meat drippings from roasted beef instead.
    I think this might even be better, giving a richer and deeper flavor and aroma. So try both options and choose the best for yourself.
