If next time you want to retry making dumplings, i would say you can have the stuffing with less meat in propotion and make it a savoury taste. I would add a little oil in a pan then set small fire,add a few star-anise .within a short time you turn off fire ,take those anise out. And then with the anise flavored oil to mix everything you prepare. In the mean time you add some soysause to make it a bit savoury. It's done. With this stuffing, you can have the dumplings boiled like you did on the video. Or you can have your dumpling fried(煎餃), add a little oil evenly in a pan ,let the pan heat a little,then put raw dumplings as many as you can. Set medium fire ,add some water with pan lid covered. Wait til it's done.
If you use peanut oil to stir-fry to minced pork first, the flavor will be better. But if you like the juicy taste of the pork , you don't need to do it this way. Use two thumbs and two index finger to pinch the dimpling skin together.
Put enough filling inside to make the dumpling skin big enough to hold. Just like blowing up a balloon. Blow more air inside the balloon will become bigger.

水餃皮的邊邊可以沾一點水幫助它黏起來呦~
我覺得水餃最困難的步驟不是包,而是"煮它"。很容易煮不熟、皮煮到爛掉、或者破掉
後來在RUclips上有教,可以在水還沒開或冷的時候放進去,偶爾稍微攪動,等到滾(冒出大泡泡)的時候,放一些冷水(cold water)進去,等到再次滾的時候、再加冷水煮到滾就差不多了(等於會加冷水2次,讓水跟外皮降溫),這樣就不會外皮已經煮到爛掉但裡面的內餡還沒有熟。
我照著這步驟去煮還滿成功的,讓你們參考看看😆

至於內餡,可以增加蔬菜的比例,加一些鹽巴及香油,味道會改善很多。這是我幾年前在倫敦進修時自己做水餃的方式。很有趣的影片。
高麗菜不能先煮,把它切成極碎,加些鹽,用水清洗後,用手掌擠乾。混入絞肉,再加上調味料拌勻。YT上有許多附英文字幕的影片,不妨參考一下。水餃通常要沾醬吃,基本是 醬油+醋+麻油+辣油

@@無明-u6v 把鹽清洗。盆子裡裝稍微用鹽醃過的高麗菜,倒些清水沖洗,然後用手撈起葉子,或是用濾網篩起。
不會做菜的Jonny跟Laura很適合住台灣,煮餃子的技巧,先等水滾燙,放入餃子,等餃子被煮到全部浮在滾水上,再放入一些冷水,等水滾燙,餃子應該就可以吃了,但水餃還是需要水餃醬油,新年快樂

1.高麗菜先洗乾淨->>切小塊狀(約兩公分)->>>灑鹽,靜置出水(約二十分)->>>用雙手擠掉水份。
2.絞肉+殺青後高麗菜->>>放自己喜愛的調味料->>>包水餃嚕。
(記得水餃皮肉餡,可以放在多一點,放完後,水餃皮另一半的週圍,要適當的抹一點點水,這樣用那個模具壓完後,黏合度才高,事後才不用在捏第二次喔!)

大部分華人的族群過年都會包餃子但台灣不會、中秋節提燈籠但台灣不會,台灣端午節划龍舟其他的華人族群不會。其他的華人會尊師重道但台灣人像朋友一樣。
提燈籠跟包餃子在台灣五年前還是有的,至少我還有買燈籠給我孩子過
近幾年因為台灣開始流行用電商買年菜,所以才比較少人過年包餃子了,但我知道某些人還是有在包餃子的

在台灣,農曆又稱太陰曆、舊曆。
Lunar 你知道的,有月亮的意思,因為農曆年是觀測月亮運行地球週期所制定的曆法規則
台灣過去二、三百年來使用農曆(太陰曆),一直到1895年日本開始統治台灣,日本政府在1909 年,日本政府正式廢除太陰曆;但為了不造成民眾的反彈,仍允許臺灣人過舊曆年,從學校及政府機關漸進推動新曆年。
也因此台灣又將Lunar new year 稱為舊曆的新年。 😊
