Middle Eastern Eggplant maze like no other

If you don’t know by now how much I love eggplant! well then here’s another recipe for you perfect for your next barbecue as a side dish (maze) or as a starter or even a dip for your vegetables so creamy and easy to make
3-4 globe eggplant medium size roasted
1/4 cup olive oil
1 small onion chopped fine
1 tbs. Garlic minced
1 tbs. Paprika
1 tbs. Coriander
1 tbs. Tomato paste
1 tbs. Sweet pepper paste
2-3 tbs. Lemon juice
2 tbs. Water
Pomegranate molasses
Salt and pepper to taste
Olive oil and pomegranate molasses to drizzle on top
