I run all my poultry at 300-325 the entire cook ! Great looking wings ! Congrats again! Well deserved!
Looks good. Try out smoking them to 165 and then finishing them with a shallow fry on the griddle. Been doing them that way for a while. Best of both worlds.

Oh, a good trick for getting the crispy skin, do like you did to dry them, then add a little bit of salt, and basically dry brine it by leaving it uncovered overnight in the fridge. I have tried a salt bring over night but never thought of baking powder., I was gonna smoke low for an hour and then air fry. I will try this because I did not see all the skin pull off. Side note I add me sauce to an bowl and heat till boiling on the stove and mix the wings. What ranch? no blue cheese and carrots?
Haha! We had ranch afterwards!😂😂. Okay, some of the wings still had the “leathery” skin - we found that controlling the temp was key, and next time we’re bringing the temp up sooner - we also got moisture from rubbing the “rub” in rather than shaking, which we feel wouldn’t make a big difference!🔥🔥

Does your fan run all the time? It sounds like a fan is running, but when I open the access door to the auger and all that…the little white fan only spins when the auger feed indicator light is illuminated.
I love to cook my wings in my Air fryer at 400 with a dry rub on them. So crispy and juicy!! Next time I'll try a little baking powder too, Melaney from SoCal

It's to protect the metal plate from drips. Makes for easier clean up. In pellet smokers, the smoke/heat comes around the sides of the deflector plates (and also radiates thru) which prevents direct fire contact.

You keep saying "flame broiler" but this is a pellet smoker. Initial I thought that was a typo but it could be the reason for the misunderstanding.@@Manny_Perez

@@waltwins this thing burns really efficiently lol. Not much visible smoke, but good aroma and flavor. Have only done 2 pork tenderloins so far.
Steam the wings for about 10 minutes before putting them in the fridge for a few hours. The steam helps render the fat under the skin.
