- Ambo Bowl in NYC! AMBO is a start- up by three engineers & childhood school friends from Vadodara, India.
Deep Patel : A Software engineer by profession turned entrepreneur. He is educated
from Navarachana Vidyani Vidyalay and later from NISV. Undergraduate from University
of Michigan in computer engineering. Worked for companies like yelp, uber and a senior
engineer at a startup called domio and later at oscar health.
Karna Deshmukh : A supply chain engineer with expertise in procurement turned
entrepreneur. He was educated from Navrachana Vidyani Vidyalay. Undergraduate from
SVIT. Master in Engineering Management from Syracuse University. Has experience in
managing the business of manufacturing corrugated boxes in India. In the US worked
for companies like GNY equipment and Cargill.
Sagar Patel : A software engineer turned chef. He is educated from Navarachana
Vidyani Vidyalay. Undergraduate from New Jersey Institute of technology.

This is such a good business idea. They seriously need to return to India and start this business in the commercial and university areas in metro cities such as Delhi NCR and Mumbai. If they can keep this affordable than university students and office goers who are usually always short of time can really benefit from this concept of Indian healhty on-the-go food.

This is a really good concept of having a food bowl mixed with rice lentils etc. much healthier than junk food. They should open this in India as well especially near universities and in metro cities. If they can keep it affordable many students and office employees will eat here.

the manual labor is intense since u are figuring out the quality of the business. i see the chipotle concept. i think architecture is the big thing to changing it to a real franchise aka real estate is everything. if u remember the mcdonald's movie. you need money or support from other artist by investing in them vise versa. good luck

the vegetarian options are a bit questionable since they don't go well with meat entrees. Why not just follow the burrito bowl model where you pick either veg or nonveg with rice base? Give papad as either a paid side or free like moe's. And have seperate little cups to hold the chutneys so the person can dip the papad in them? Needs more refinement to make it a little more american/vegan type with indian spices to make it flavorful.

I would suggest them to give rice & roti in different single bowl and in one bowl separate 4 curries/ vegetables(like quadrants) instead of them all mixing. 🥰
thats not how "bowls" work in the US. people want their food in an easy to manage way. what you are suggesting is more like a thali concept as seen in restaurants

Actually this is not new, several places in US serve Indian bowl similar concept of chipotle/qdoba
they serve restaurant style or wedding style food in the bowl. everyone knows there is a market gap but none of those have been able to go beyond 7-8 locations due to these problems. You can't get repeatability with the customers in the wedding style or restaurant style. That's where indian food is struggling in the US. This is home cooked indian food in bowl style which can be had everyday, hence everyday indian food.

Everything is good except for combos. Coconut chutney goes well only with idli or dosa , why even keep such an option when there is no idli or dosa. And who will eat bhendi with chicken ? Why even have bhendi , instead they could choose aloo or shimla mirch that goes well with every other options.
