그래서 마늘을 일찍 심든 늦게 심든 수확은 장마가 시작되기 전에 수확해야 한다.
우리나라 장마는 평균적으로 제주도는 6월 20일 전후, 남부와 중부 지방은 6월 25일 전후해서 장마가 시작되므로 난지형 5월 중순에서 6월 초, 한지형 6월 초 에서 6월 중순에 수확하면 된다.
또 다른 수확하는 시기를 알 수 있는 방법은 마늘 잎이 약 50~60% 정도가 누렇게 변하면 수확하면 된다.
또 다른 한가지 방법은 장마가 시작되기 전에 모두 수확하면 된다.
이와 같이 마늘은 장기 보관하는 관계로 수분이 많이 함유되면 오래 보관할 경우 상하거나 해서 상품성에 문제가 발생하므로 반드시 장마전에 모두 수확하여 그늘 지고 서늘하고 통풍이 잘되는 곳에 보관하면 오래 두고 사용할 수 있다.
