  • Karanji is a sweet snack often made for festivals. These half moon-shaped fried pastries are stuffed with a mix of grated coconut, dry fruits, suji, cardamom powder and powdered sugar. The covering or the pockets are made of all purpose flour and then stuffed with the suji filling and then deep fried. These are packed with nutrition and taste very delicious. They are kids favourite and is a very traditional Indian sweet snack or sweet pastry.
    Ingredients :-
    ------------------------
    Thin Rawa ------------------------ 2 cups
    Ghee --------------------------------- 1 cup
    Sugar -------------------------------- 3/4 cup
    Green Cardamom ------------- 10 to 12 nos
    Cashew Handful
    Raisin Handful
    Dry grated coconut ----------- 2 cups
    For Puri / Pocket Filling :
    Maida -------------------------------- 1 cup
    Little salt
    Ghee ---------------------------------- 3 tbsp
    Water for kneading dough
    Water for making Gujiya
    Dry Maida for dusting
    Oil for frying
