For those who want a vegan version, fish sauce is not required, it's just for taste preference. Leave it out. Korean ANCHOVY SAUCE (not Vietnamese fish sauce) & seafood used to be added to quicken fermentation of big batches but it's not necessary for smaller amounts (plus it's more expensive). Anchovy sauce is milder & not as salty. The rice portidge (juk) he made in the microwave is not necessary either, it just makes the sauce stick to the Napa cabbage more. We like kimchi juicier, so my Mom doesn't use it.
