- Mutton polov/Mutton bafat is an authentic Mangalorean dish which is served for all Catholic functions, especially wedding.
it is a typical stew made out of roasted & ground spices, coconut milk, mutton and ash pumpkin,(Called as Kualo in my mother tongue)
List of ingredients
800 grams of mutton with bones
500 grams of ash pumpkin (kuvalo)
12 chillies Kashmiri chillies and bedgi chillies
1/2 tsp peppercorns
6 cardamons
9 cloves
1-inch cinnamon stick
4 pods of garlic
1 tsp of cumin seeds
3/4 tsp turmeric powder
2 tsp coriander powder
Pinch of tamarind
3 large onions
2 tomatoes
Coconut milk of one whole coconut
Salt as per taste
Ghee and oil as required
