Hi, I am a little confused why you transferred pots at 1:18? Since you were going to eventually add broth, couldn't you keep the same pot and simply use the broth to try and scrape up the goodness that's in the bottom of the pan before you cover and let the rice fully cook?

Wonderful recipe! But there is just one thing, when you use rice in this way, the rice is the main dish, not a side dish. One suggestion, instead of coriander seeds, try using cilantro leaves as a substitute, and tell us how you like it.
Looks good. If rice weren't so FATTENING I would eat it. Alas, the carbs are out the roof! I lost 80 pounds and am down to a normal weight so I don't want to regain that weight. Very low carb foods for me. Rice is far too high in carbs... makes the weight creep back.

Whenever you make long rice,Use India gate premium brand Basmati Rice or Tilda.. Not all basmati rice available in markets are not the aromatic one

I find it goes so well with meats and seafood, too! :) I've never used coriander leaves, I'm not sure we have those

Maybe you can try something similar with cauliflower rice? I hear a lot of keto/low-carb people do that :)

What kind of mushrooms did you use? There are literally thousands out there.
Feel free to use your favorite variety. I believe I went with baby portabella mushrooms here.
