Start with the onion. Rule one. Add garlic.. then do mushrooms. Throw in a little white wine with the mushroom. This will help your mushrooms not just taste like butter and they will take on the onion and garlic that was in the pan.
Agreed. Infact I'm sure Mushroom doesn't overcook that easily so you could just add the rice and water directly to the mushrooms. This felt really inefficient (making mushrooms onions and rice seperately)
The reason he's doing the mushroom separately is so that he can have them flat on the pan for the browning. Same with the rice. You can't get the mushrooms properly browned or toast the rice with the onion and garlic in the pan.

On "Chef Show" on Netflix, I saw Chef Roy Choi actually peel the outer layer or skin of the mushroom more for presentation's sake than cleanliness. I've adopted this into my home kitchen and with the stems and outer layer (sans dirt) one can make mushroom stock or simply compost them. (unfortunately don't have means to compost yet, but the stocks have been pretty good for what it's worth!)

I could eat that whole thing also there's this mushroom recipe you get couple bottles of red wine to be cheap whatever put it in a pot with the mushrooms in it and simmer it for as long as you want I guess they are so good and with the stems I would chop those up and I'd save them freeze them

i dont like the smell of olive oil in the rice, i may try to use peanut or grapeseed oil or just vegetable oil.. rice is our daily staple food so the way we cook rice is using rice cooker instead of frying it or boiling it n a pan. it doesnt cook well (grainy feels like eating raw rice). what would we do is put together the rice the garnish (mix mushroom) in rice cooker add in water and butter, push the "cook" button wait till it runs green and check it.

Sometimes I wash em sometimes I just wipe em off. And I also prefer to remove all oions from the pan. No need to waste,.
I wash them, but then cook them for about 10 minutes afterwards.
