    Hey sweet gal, so good to see you! Thank you for the reminder that if all you can do that week is a wash and chop, that it's OKAY! I'm working on learning to love bok choy - had it in pho (had never had pho before in my life) and adored it that way. So now, all I need to learn is how to fix veggie pho :D Yu choy? I've not had but going to our local asian market to find it :D I need to learn how to love sweet potatoes too, will hopefully get there soon! Wee bambina has grown so quickly! So good to see you back here, thanks for the video!

      Wohoo!! That’s right! Do what you can. 🤗🤗 And yay! Bok choy and yu choy are so good for you! Way to go for trying them. 🤩🤩 I have a vegan pho recipe on my channel (just search letseatplants pho) and it’s honestly so easy to make. And really healthy too!

      Aww thank you! 🤗🤗 Definitely trying to stay on top of prep but it’s been hard to get videos out consistently. 😛🙈
      So the short rectangles are 1.0 L (34 oz), the tall squares are 1.2 L (41 oz) and the tall rectangles are 1.8 L (61 oz). All are from IKEA! I have some similar ones linked in the description box of the vid, but I do really love the IKEA ones. 😊

    My fridge is 25% filled with condiments, marinades, dressings, olives, beets, etc. I can store meal prep items but have no room for leftovers, but I also don't want to cook every day either. Can you please share how to manage both? Maybe I'm not doing something right. It's stressing me out and the juggling for space in the fridge is also stressful. Thanks!

      Great question!! Do you utilize your freezer at all? That’s my #1 tip for those with limited fridge space. You can do so many time saving meals & hacks with the freezer! (Cooked beans, rice, soups, etc. ready to reheat and eat).
      My other tip is to meal prep either ready to go meals (that way the only Tupperwares are food you’re about to eat) OR meal prep by batch cooking and put those elements together in quick meals the day of (I.e. a tupper of rice can be a Buddha bowl, salad, soup, etc. in a very short amount of cook time.) You will technically be cooking often with that 2nd option, but the meals come together really fast. I also try and do space saving where I can, like in this video, cooking the bok choy and yu choy saved sooo much space as they are bulky when they’re raw. Hope these tips help a bit!
      And I feel you on the lots of dressings/ condiments.. my fridge is the same 😜

      Yes! I usually put them in either a ziploc bag (which I just rinse out and reuse each time) or a produce bag like this: amzn.to/3MWXrNi 😃😃

      You're absolutely right! If I don't prep, I definitely won't eat as healthy. That's why I make it a goal to try and get some veggies prepped each week. 😊
